I became a fan of this recipe. For the chocolate version I added an additional step: heating the cocoa powder with half of the coconut milk for a couple of minutes. Heating the cocoa powder "opens" its flavor and it enhances its chocolate taste. With raspberries or a spoon of peanut butter it is simply amazing

❤ this freezing idea for days when I barely have time and zip out the door minus breakfast. Now I just take a jar out as soon as I wake up. I put it in my bag and I’m out the door! When I get to work, it has already fully thawed and I’m a happy healthy camper. Thanksssss

I have to agree, mango and coconut work wonderfully well together. I find that adding a few cranberries works really well as their slight sourness complements the mango nicely and gives it an appetizing colour palette.

For the creamy chocolate chia pudding dessert I use full fat coconut milk, a table spoon of maple syrup, vanilla & cacao & stir it up. & then I add all the extras depending on my mood. Adding strawberries & bananas ontop is a go to for sure though. 😁 It makes it's so yummy with the coconut milk! 🥰

My go to chia seed pudding recipes are: 1.) Jif PB and Granny Smith apples, a drop of maple syrup, pecans (Nuts going soggy is not a big issue to me.) Raisins, Dried Dates, and or Apricots. I don't add the PB til just before I eat it, and OMG! This is so freaking good! The other is mostly just dried fruit, golden raisins, cranberry raisins, pecans, almonds, occasionally walnuts, dates and apricot. a pinch of nutmeg, and or vanilla extract. I love using almond milk for this one. Havn't made either in a while, though and didn't think to take a picture.

i've been doing chia pudding for a while and those are very good pairings, some i never tried myself.
One thing i noticed is that when i make chia gel, the seeds expand and gel much better if i use water only. Not much water, just enough to cover the seeds and a littler more. THEN i add this gel, where the water is completely absorbed, to whatever milk im using, usually home made almond milk or coconut milk, this way i get a better result than adding the seeds to the vegetable milk, maybe the fats in the milk slow down the gelification process? Just a guess.

Great meal prep. Very organized and I love that you wore an apron. You made it look real. I see too many videos of meal preparation where the individual is very dressed up with makeup and it just seems superficial. Also great variety of toppings. 👍🏿

i can't remember exactly how i found your channel, but i've been enjoying "dessert" tofu as an alternative to yogurt since i'm very sensitive to lactose! i know that soy products aren't that healthy either so i've mostly just been skipping snacks or desserts like that altogether and it's been hard. i'd never heard of chia seed pudding before, but i've always incorporated chia seeds into smoothies for the calcium, so this is such a great recipe to have stumbled upon!! i tried it with some plain almond milk, however now that i've found your recipe for cashew milk i will be trying that also. thank you so much!!!!

Would love to see "what's in my refrigerator and freezer" video. It's hard to keep a stocked fridge of fresh food when you live by yourself. I'm normally just chasing and eating whatever is about to go bad.

Haha, I thought it would be easier to keep track of everything in your fridge when you live alone. Living with others though, things go missing 😆.

now it all makes sense why my try at chia pudding went wrong, too much milk, and i did not stir 15 minutes later, it was a recipe i found for keto chia pudding ideas, the guy told me 1 cup milk for 2 tablespoons of chia, but your video popped up on my youtube page, im glad it did, i going back home to try it again, wow you did an awesome job, looks neat, pretty, healthy and very convenient, two enthusiastic thumbs up for you, and i am about to subscribe, thanks.
