Rice & Red Beans Haitian Recipe (Diri Kole A Pwa) - Easy / Beginner Friendly

  • Bonjour everyone! In this video I will show you how to make an easy Haitian rice and beans recipe.
    The Haitian Rice Epis I used in this video can be purchased at: www.machehaiti.com
    Ingredients:
    Long grain rice ( I use jasmine and basmati)
    Red Kidney Beans (I used pinto in this video but I used a culinary trick to make the water brown)
    Diced white onions
    Diced green peppers
    Spices:
    Neguess Creole Rice Epis
    Or
    Scallions and chopped garlic
    Maggi Bouillon Cubes (I use a substitute)
    Seasoned Salt
    Black Pepper
    sweet green pepper
    Cloves (crushed or whole)
    Thyme
    Parsley
    Garlic Powder
    Butter
    The key to beautiful brown rice is to achieve beautiful brown water and that comes from boiling the beans first. Cook the beans in water for about 30-45 minutes until they are soft to the touch and can easily be split crushing them between two fingers. Once cooked, drain the beans and reserve the water.
    On medium heat, In a cooking pot add some oil and begin sauteeing the Haiting Epis, or the scallions and garlic until brown. Next add the diced onions and green peppers. Continue to sautee and then add in the cooked beans. Next add in all the additional seasonings such Maggi, black pepper, crushed cloves, thyme and garlic powder. Quickly blend the ingredients and then add in the reserved bean water.
    When it comes to cooking rice, use 1.5 cups of water for every 1 cup of rice. Measure out the amount of rice you’d like to use and add the appropriate amount of water. Gently stir the water and give it a taste to ensure it is to your preference. This is the time to add more spices or seasonings. If the water is too salty, pour some out and add in more water to dilute to salty taste. Once the water has begun to boil, it is time to add in the rice.
    Wash your rice over and over in a bowl until the water runs clear and then add in the rice to the boiling pot. Give it a good mix to ensure the beans and seasoning is evenly distributed and allow the rice to cook on medium high for 5-7 minutes or until all the water is absorbed. Next, turn down the heat to low and cover the pot, letting the rice cook for an additional 20-25 minutes.

    I boil my beans in coconut milk towards the end, before frying them/adding the rice. It adds flavor

      I feel like coconut milk can be overpowering. But of course, everyone cook Diri Cole differently
