I'm over 60 years old grew up in SE Texas and have made beans this way my whole life. I have a suggestion though. If you will wait to add your salt until the last 30 or 45 minutes they will naturally soften to where you get the texture you want just by cooking and maybe mashing a few against the side of the bowl just for fun. By adding salt at the beginning you increase the boiling point of the water, and you make it difficult for the beans to soften, which is why you are pulling some out and mashing them in a bowl. Having a lower boiling point causes the beans to roll, which helps soften them.
Thank you for your wisdom!
Mannnn I’m hungry now n missing my Mississippi family. It’s time to go back to celebrate Christmas n eat good!!

I'm from Martinique and we have the same recipe, except from the sausage we use pig's tail. It's fascinating to see that we share some common recipes all around the Caribbean but also in the US.
I'm Australian. I'd never heard of this stuff until I just heard of it. I've made it twice since. It's good gear.
Make some buttery crusty biscuits (U.S.) and some southern style fried chicken (buttermilk deep fried preferably) to go alone with it. If you like sweet tea, that's also normal.

Made this a few days ago and my gf actually really liked it. Don’t underestimate that. My gf doesn’t like anything and she liked this recipe. That’s worth more than any amount of subscribers you can ever get, I mean it. I’m making it again as we speak, thanks, AB

@@SmokinandGrillinwithAB yo, AB. I know you’ll never see this, but almost 2 years later, I’m back here again making your recipe yet again. This is one of me and my gf’s favorite dishes of all time. Yup, I’m still with the same girl if you’re wondering. I know you have a newer video out for red beans and rice, but how can you improve perfect?? Maybe I’ll give it a try
I will never understand why so many people in this country dislike black people.

Thanks for the tip on soaking the beans for one hour in a pot with the lid, off the burner, in boiling water & it's just like soaking over night. Who else knew???😁

My grandma passed away last year and I wish I had this recipe from her. She was born & raised in Louisiana. Ive been trying to make a lot of Louisiana recipes just to feel comfort. I’m going to make this tonight using your recipe since I just searched on YT and your video popped up. Thanks for making it look so easy! I have all of the ingredients except the celery so I’m going to do a quick store run. My beans have been soaking since last night. Thanks for sharing your recipe man I really needed this ❤
What I love about ABs channel is the fact that I can pick any Southern dish and he has a recipe for it.
I made this today and it turned out amazing. You know black ppl don’t measure stuff forreal so i eyeballed the seasoning amounts and used chicken stock. It was SO good and satisfied my craving. Thank you 😊
Lol for real
Ppl don’t believe us when we tell them our ancestors really let us know when to stop seasoning something. My son(15) had asked me how much seasoning to use when he was making Rasta pasta, I said your anchestors will let you know, just listen for the “enough my child” 😂 I was dead serious too. His food is no longer tasteless or salty💯
Real talk 👍🏾💯
The beans look PERFECT, AB. I always add a little less water; 4 1/2 to 5 cups. That way I don’t have to smash my beans for creaminess. One less extra step. I’m lazy! 🤣 I learned from my Creole grandmother. She also added a little butter at the end. God bless, and love your channel.
I like the butter addition. I'm gonna try it :) Thank you
I always put a smoked hamhock in mine, but otherwise the same.
I seen the butter addition for creaminess on another channel. I grew up in South Louisiana and haven't had red beans in years. But you sir are the only one that got my subscription. Keeping it real. Trying my first batch of beans tomorrow.

Excellent video. I like that you cook the sausage separately, and then add it back at the end. Lots of other cooks leave the sausage in the whole time. Since Andouille sausage usually comes fully cooked in the package, I don't want it sitting in the pot for a couple hours. I do put in a ham hock, just because the meat on the hock is the tastiest part of the pig. To mash up some beans to release starch, some people just smash them against the side of the pot. I like to use a potato masher right in the pan. I don't know if it is traditional, but most recipes call for a little cumin, which I personally like. Keep up the good work!
>>I like that you cook the sausage separately, and then add it back at the end> I do put in a ham hock
Ive made this version many times on Wash Day Monday and all I hear is what ever you’re cooking smells great.
Omg.... you NAILED IT ! , by far the absolute best red beans and rice I have eaten in 46 years of my life.

I’ve been using this recipe once for at least the past few months and it rocks every time! And I’m using again today on new years. Still Awesome!
Which one did you use? Chicken Stock or water?
My family loved this so much. I had some leftover cooked smoked turkey from Thanksgiving in my freezer so I went ahead and threw it in the crockpot as well. Fantastic!!!!
Cuz say “You Know” every other word. But man, he knows what he’s doing. BOMB!!
The Trinity plus carrots is called the Mirepoix in French. My grandma was from France. She had a bunch of Cajun French friends and it to make me smile when she talked to the Cajuns in French. Anyhow, Cajun/Creole food is the best from African recipes mixed with the best of French recipes. Absolute magic. She would joke that the Cajuns would call it 'Mirrowquauy'. Same delicious combo. Keep cooking good food bro.
Almost. The Trinity MINUS Pepper Plus Carrot is Mirepoix. The French dont use green pepper at all in their veggie base for soups and stews. The legend is that when the French came to Louisiana, peppers were much abundant and easy to grow here, and in-turn it quickly became a replacement for carrots in their mirepoix. Hence, the trinity was born.
French don’t use green pepper in Mirepoix.
@@st-doubleO-p-i-dThat's a fact Michael.....only 3 ingredients in Mirepoix

Absolute W of a wife!😀
When I had to “fill in cook” at my restaurant on Mondays, I made a ‘hurry up’ beans and rice; this looks way better, can’t wait to try it.
BTW, we Calle onion, celery and green peppers the Cajun Trinity and onions, celery, and carrots (Mirepoix) the French Trinity.
It wasn't call the cajun trinity until recently just like most things now that wasn't called cajun.
@@roybabineaux5353
True
Yes, mirepoix. I use it all of the time.
I personally use jalapeños in place of the bellpepper, with the celery and onion, and have coined that mix the Texas Trinity 🤣

Canadian here. I have made this twice, exactly as you did it. Best thing I've ever eaten. I could eat this every day!!
#LouisianaGirlHere: Your beans will cream if you cook them medium/Low for about 4 hours! Yes I know everybody does not have that kind of time, just know a Crockpot is an awesome tool for beans when time is a issue!
Wish I would have seen this before I started making mine. It’s dinner time and they are watery as hell
Yes!! Crock Pot is the best for beans.
Yup after about 3 hours it's when they start to cream by themselves, learned that the 2nd time making it
His way is a good concept but the key to creamy beans is the water level over the beans "Not to much water" and cook it down !!!!
So how long should I cook the beans down in the Crock-Pot?
I made this today and we love it. Especially the method of smashing a few at the end for the consistence of your liking is amazing
Red beans and rice is my husband’s favorite meal. I’ve been reluctant to try it in case I didn’t do it justice. We used this recipe last night, and it was great! So glad we found this video and channel! My husband says, “highly recommend!” 😋

@@SmokinandGrillinwithAB welcome
This video inspired me to take my first attempt at making red beans and rice. And I'm pleased to report that it was a big success! I didn't make any tweaks to the recipe, although I only had crushed bay leaves so I skipped that part. Took quite a bit longer than advertised to sufficiently thicken up at the end, but I'm glad I stuck with it. I think next time I'll probably try mashing a greater amount of the cooked beans as that should speed it up a bit.
Anyway, thanks AB for the recipe and video. This will definitely be a part of our regular cooking rotation!
