very good.. my grandmother, we called her maamaw.. put baking soda in her beans.. when she made soup beans and cornbread.. she would load it up with saltpork.. such as was eaten during the great depression in Kentucky....
I grew up up in Virginia mountains in the 1950’s-1970’s. My grandmother we called her “Big Ma.” She seemed to always have a pot of “soup beans” as we called them then. Usually seasoned with some ham hock from the many hogs we butchered. That with the homemade cornbread and butter she made from a butter churn I turned many times. That with some young onions. The soup beans were even better the next day warmed over on her cook stove. Any cornbread left over was often put in a glass of milk as a treat that I still do 60 years later. I wouldn’t trade my “poor” upbringing for anything I see today. I would trade all I got to just to wander back to that little mountain shack.
Thank you so much Melissa. That’s my daughter’s name as well. It warms my heart to see young people with good life skills. Life is an art, and you are an artiste!
Lots of interesting hacks here, and I enjoyed your presentation as much as the information. I stumbled on another trick some years ago when I had to go on an unexpected weekend away in the midst of my bean-soak schedule. I rinsed the soaked beans and bunged them into the freezer. Came home and cooked them, and was surprised to find they cooked in abut 25% of the normal time. Now that's my go-to strategy. I think the ice crystals break apart the cells like cooking would, so effectively they are frost-cooked part way before they even hit the pot. Can't say if they are less gassy that way. Maybe some other folks could do a comparison and we all could share results?
Thanks, great video! Soaking does make such a difference! I also add at least 2-3 large bay leaves per lb of dried beans to help de-gas w/ the other spices when I cook them. Once cooked, I freeze some in single serving size containers, better than canned or other fast food! 😄
I've been cooking beans the last three nights: first mung beans, then black-eyed peas, and today adzuki beans. All of them are so delicious the way I've been making them. The mung beans and black-eyed peas are good after soaking 2 or 3 hours. The adzuki beans I soaked for about 16 hours. First I rinsed them three times before soaking. Then after soaking I rinsed again and again with filtered water. I put some ghee in the bottom of the pan (for vegans you can use olive oil or coconut oil), heated it, added turmeric and black cumin seeds, then half a minute later I added the beans with water and coconut milk/cream. I added a teaspoon of black pepper and cooked for a couple hours. Then I added ginger, a sweet potato, a rutabaga, and a beet, plus coriander, fennel seeds, fenugreek seeds, a little chicory root, and let it simmer. Towards the end of cooking I added a few shakes of salt, and oh my my! It is so-o-o goood! Sweet and delicious (with no added sugar), it's yummy! I didn't know about adding baking soda to the soaking. I must try that. I also didn't know about the two things you mentioned after that, which would be worth trying.
Hi!! Just found your channel. I can’t tell you how helpful this is. I’m WFPB and currently trying the low FODMAP diet for IBS-C. I’m wanting to reintroduce beans. I tried one day and had so much gas. I soak beans in summer overnight in winter 24 hours. For extra heavy sorts like Fava beans I add baking soda to the first 12 hours of soaking. Next day cook them for 10 minutes on high heat in fresh water without seasoning and let sit for like 3 hours. Then change the water and cook with the seasoning and everything. This takes away most of the gas.
Thanks for the baking soda tip, I’m getting ready to do a big bean canning day and I can’t wait to try this…God bless you and thank you for sharing 🌺🌺🌺
The thing I do to de-gas beans is: Bring a pot up with the beans in it to a slow rolling boil then dump the water after 10 minutes and rinse the pot and beans and repeat that 2 more times. That should be 3x in total for a total of 30 minutes. Then if you are going to cook the beans after rinsing for the 3rd time then boil for an hour or so and do not salt because that will cause your beans to have to cook longer. - I normally drain the beans and dry them thoroughly and store them in the fridge until I am ready to cook them.
I have started eating beans due to some extensive dental surgery, but have really learned to love them. I love Rancho Gordo beans so much. I really like your shirt😍
I make and eat lots of different types of beans. The nation #1 to learn how to cook all sorts of beans and lentils is India. The best thing you can do to make your beans more digestible is soaking. I recommend not 8 hours or twelve hours overnight, but 24 hours or up to two days. You rinse the beans several times and each time in fresh water and when they start to develop a small root, they are ready to go. Long soaking time is absolutely crucial. The next important step is to cook it slowly and let the beans take their time to soak up more moisture and make them even more digestible. Best thing is to heat it up, boil it on low heat for a while, then switch off the heat and cover the pot with towels to keep it warm over a prolonged time. You can use a cooking box if you have one. This way the beans can not burn. You do this multiple times and allow the beans to rest for some time until you are satisfied with the result. The pressure cooker does not create the same result. Honestly, the beans get such a nice taste and texture that you can only achieve by long soaking and slow cooking.
I clean pinto beans very well, soak them overnight, and clean very well again. Then I leave the damp beans in my refrigerator for 2-3 days. When you take of the cover after this, you can smell a waft of alcohol--I think that's because the indigestible sugars have fermented. I then wash them very well one last time and cook them. This take planning and fridge space, so it's not for everyone. But it works much better than the Julia Child quick soak and better than just soaking overnight.
I normally boil my beans with a little baking soda for 5 minutes and let it soak overnight....rinse in the morning a couple of times and then cook very fast.
Thanks for this video sis!!!! We just had beans tonight (a beans and rice dish from a RUclips channel) I de-gassed the beans without even knowing it. I cooked the beans in the pressure cooker and added cumin with tumeric. Boom! No gas! I like not having to toot after my food. 😂 . I'm so excited to know I can continue to do this and get the same results every time! This video is so helpful. 🙂
Thank you for sharing your knowledge and upbeat perspective on diet and food. As a bean lover I'm always interested in ways to reduce the gas issue. You've given me a few good ways to work with that.
I saw on another channel that if you use baking soda it could leach out the vitamin B6 in the beans. Also it was said that you should let the beans soak 48 hours and rinse them at 24 hours. I don't know something to think about.
Asafoetida tiny pinch also helps. Didn't know about yhe iodine and seaweed. If your gassy and need to be somewhere quick a 20 min fix is having charcoal tablets with a large glass of water.
This video is phenomenal. I really appreciate and strongly admire your knowledge and I aspire to be this knowledgeable about plants and their molecular make ups and stuff Thank You for making this!!👏🏾👏🏾👏🏾🙌🏾
I remember my experience with chickpeas. i tried to make chickpea salad with the canned chickpeas and my system could not tolerate them no matter how much i loved the salad. Someone suggested I cook the chickpeas myself. I didn't want to because i wanted the convenience of opening a can, but reluctantly i did after soaking them overnight, and to my surprise i had no issues with the ones i cooked myself. Lesson learned! Thanks for sharing these wonderful tips and helpful info!
I think it's because they cooked them in the can, while sterilizing. I soak beans and discard the soaking water. I remember an old recipe that say to cook them in the soaking water, best recipe for gas.
I love the information in this and I love the fact that you have the old school Mama tips but you updated all of those to be healthier and more educated about your health as well as knowledge of the beans. Thank you so much❤🎉‼️💪💐
Ajwain is called as carom seeds. One spice you forgot is aseafoetida or hing in hindi. Ajwain should be added while simmering to have best results. Hing should be added to the seasoning.
Play video. Yes, I love beans, but they give me a lot of gas. Yes, I do not eat them. I can't understand the fact that when I was younger, my mother made pinto beans which did not give me gas. I loves chili, navy & pinto beans. Help me to digest them. I'm getting very hungry thinking about delicious beans meals. 😂😂😊
The first method I already do. About 5 yrs ago, I stopped buyin canned beans and went to all dry beans. Buuuut I kinda live in my own little bubble and "discover" a lot of things by accident. I guess this is one of those things that I was already doing that's actually pretty worthwhile. I didn't do it to cut down on gas tho, but cool to know that's an added benefit. Now that I look back on it, I really never got too gassy when I eat beans...and I LOVE beans.
Girl! You killed this video! This is to my surprise, my first time seeing you but I’m so excited to watch more of your videos! I love everything about your style and delivery!
Thank you for all of these fantastic tips, Melissa! Your presentation style is tremendous; I subscribed before you asked! 😊 You're beautiful and so is your backdrop. Your video probably hit my tl because I cooked beans earlier and shared that info with a couple of people so they could come get some. I'm not vegetarian or vegan, but I've been working on getting in more beans and less meat. Last week was lentils and this week is pintos. Both turned out really buttery and the pintos are rich like chili. I'm glad that your video popped up for me as confirmation and for some new information, as well, like kombu and ajwain. We use some of the same spices, seasonings, and vegetables besides those, though. Za'tar, Garam Masala, and 21 Salute are three of my favorites! In addition to carrot, onion, celery/ parsley, and tomato, try some crystallized orange peel, too, for a delightful surprise. Cinnamon works wonders in black beans, pintos, and some others. Also, I add in olive oil, or avocado oil. Instead of cooking them overnight, I parboil and then steep for an hour before cooking with the baking soda included. Again, thank you, thank you, thank you! I look forward to more content from you! ❤
@@GeorgiannaMartinSure! Soaking the beans overnight in baking soda is supposed to help reduce bloating and gas, but last week I forgot to add it to the soaking water (discard afterwards), so I just added a little baking soda while the beans were cooking. The ratio is approximately 1 tablespoon of baking soda per 2 cups of beans. Hopefully, that helps. Blessings!

Making homemade small red beans & rice rn, (sorry, we still carnivores here, added some smoked neck bones, too), & of course, with some homemade cornbread... Great video, just missing one anti-gad ingredient: hing (aka asafoetida). You can get it in an Indian grocer, strong onion/garlic/aromatic flavour, and incredibly powerful anti-flatulent. Just make sure to store it in a glass jar, as the flavour seeps through plastic and and affect other spices it's stored with.
Thanks for widening my knowledge of different types of ways to gas. Soaking overnight always a family go-to. I use kombu to add flavor to soups or rice, never thought for beans 🤔. I'll try some of these out. Sending 🕊 🕯❤️🙏🏽
Beans are so nutritious and delicious. I often forget to soak them at night, so I just soak them when I remember , during the day . This is a great video. Thank you.
You have a new subscriber! Great advice for this guy who passes a lot of gas. I live alone, so that’s good from the offending perspective of gas, but I’m not always alone, so gas is still a social problem for me. I eat both canned and dried beans so I appreciate you including tips with both these in mind.
I have IBS and endometriosis, so for me it’s not just gas but incredibly painful (basically debilitating) cramps and bloating. I cut out beans completely a number of years ago. But, I miss the flavour, versatility and especially the health benefits of beans. It would also really increase the types of meals my pescatarian boyfriend and I can have together. I recently got an instant pot so I’m going to give these methods a try and see if they work for me. Thanks so much for all of the tips!
I relate as a fellow IBS sufferer who also gets those excruciating cramps and a whole bunch of nastiness in my stomach region 😂 I'm praying this will work. I've basically stopped eating beans because of the gassiness and other issues but if I can eat them without the negative stuff it'll be a game changer because I love beans and used to eat them like crazy (until I realised they were a big part of what was messing up my stomach).
Im new here. My husband and I are fasting this month and we are seriously considering going vegan. I ran across this video because ive been cooking a lot of beans in our meals, and the gas ain’t no joke. I do soak my beans. I’ll try a pressure cooker. I haven’t heard of using baking soda, kombu, or using carrots. This video has been very informative. Im a subscriber now. Thanks
Don’t forget the couple of drops of Lugol’s solution (iodine), does a chemical reaction with the sugars so that they don’t cause gas. That’s the reason you can soak the beans with a large piece of seaweed - same purpose. Just be sure to thoroughly rinse the beans after soaking with the iodine so you don’t eat too much of that.
@@CK-vp6hh Yes, just 2 - 3 drops of Lugol's solution in the bean soaking water but not more than that. Then just rinse beans thoroughly after soaking. Then you don't have to mess with the Konbu seaweed
The incredible unami from kombu is not to be missed tho! I just cook it with the beans. I soak my beans 24 hr tho Except lentil or split peas, those are 8hrs
@@YeshuaKingMessiah Yes, I did this as well! I used Kombu for a couple decades, but 100 - it never eliminated the gas completely. Sadly, as much as I love all kinds of beans, bean soups, bean salads and spreads, I rarely eat them anymore and I feel much better.
Your video blessed me with learning new tips. I added ACV to my soaking beans to help with nutrition. I liked your presentation so much that I subscribed to your channel 😊
Hello I read your comment on cooking beans in an instant pot. I have a question, do you cook the beans in just plain water and salt? Then drain the cooked beans and water. Add fresh water, and beans and seasoning back into the instapot. Then cook for 5 to 8 minutes. Could you please reply if I sent this message correctly and if I understood it correctly. I love cooking beans in my Instapot but I never thought to drain the cooking water. Then add fresh water and seasonings after that. To reduce the gas in the beans.
Thank you for this channel. I just found you and I'm glad that I did. My "bean palate" is narrow, but slowly expanding as I incorporate more beans into my diet. I make hummus from scratch (dried chick peas) and I soak them overnight with a little baking soda and a pinch of salt. Next morning I will rinse them well and slow cook on stove top. This makes the most creamy hummus and I have stopped buying those tubs of hummus in the supermarket because my was is so much better. Smooth and not grainy at all. My "go to" bean is Blackeye Pea. These are soaked overnight in plain water only. In the pot, I will add a piece of fresh ginger. I am trying to get my grandkids to enjoy beans so I sneak Black beans (cooked on stove top) into burritos or tacos.

Oh, and I use the instapot big time. You gotta soak them beans y'all! ... with a little baking soda! Yes! Absolutely! Soak them overnight. PS ETA: Instead of using Kombu (which is how they make Kombuci) use sour kraut (sp) and carrots.
Glad I found this channel. My sister is losing a lot of weight doing whole food. I’m not ready to make a commitment but I am changing toward that life style.
I’m so glad you’re here 💕
The kombu/carrot tips and categories of less gassy to more were so interesting! We’re in a drought so I was looking for ways that use the least amount of water, long-distance transport, plastic, and planning. Thanks for collecting all these options!
It's a shame you don't live closer to our store. We'd love to hire you for our next cooking class. Most folks have forgotten how to cook dried beans and it's so easy! If you every find your way to West Texas, let us know. Great video! You're a natural...
I absolutely soak my beans after bringing them to a rolling boil and leave them overnight. Since then I've never had issues with gas. Thanks 🙏👍 for your validation!
You are very enjoyable to listen to and packed with great info and you go fast not being silly and wasting time.
Thank you
Soak and Drain! Draining away the soaking liquid helps remove the gas issue too.
For sure!

I'm a first time watcher, and I absolutely loved this. I think you'd do well with having your own TV show. Great disposition, info, and delivery of said info. Also, is well produced. Keep at it!
JuliaChilds way is how I do them. Cover with water, bring to a boil for about 10 minutes. Let sit until water is brown and change water. Repeat until water remains clear then cook. No gas!
You don't soak it overnight?
@@TaLeng2023 No. No need to soak if you just bring to a boil and wait until the water turns brown ( Pintos) The brown water is the undigestable part. Repeat again one or two more times then cook. Julia Childs cooking

very good.. my grandmother, we called her maamaw.. put baking soda in her beans.. when she made soup beans and cornbread.. she would load it up with saltpork.. such as was eaten during the great depression in Kentucky....
Aw thank you Barbara 😌 God bless you, Melissa and fam! ❤️
Smart cooking!
in Italy we mostly use Laurus nobilis leaf or fennel seed when cooking beans to help digest them. Thanks for all the tips!
Yes. I soak my beans over night and use a slow cooker. I want to try the baking soda trick now. Thanks for sharing
Awesome Felicia! Thanks for sharing 💜
All one has to do is eat beans REGULARLY. THAT'S IT! No gas. No problems with digestion: PERIOD!!!
Not good to cook beans with slow cooker. Higher temperature is required for cooking healthy beans. Pls research it.
First video with you that I watched, loved it! Your energy, knowledge, humor are just top notch. Plus the theme!
Thank you 😊
I've been cooking beans the last three nights: first mung beans, then black-eyed peas, and today adzuki beans.
That sounds so good. Did you have gas?
@@quinnieskitchen I don’t remember, but all that soaking should have reduced the gas.

I appreciate this video. Gas hadn’t been an issue for me until I moved to the desert. I’ve learned to eat more foods with water in them 🥒

So happy your voice will confirm mine, I have tried to pass the bean hack on to my children from my mom, thank you
Nice! Blessings to you and your children 💜

Lol! Im happy for you Jerron!

Thanks for sharing this link , Educational we cook beans two times a week.
I saw on another channel that if you use baking soda it could leach out the vitamin B6 in the beans. Also it was said that you should let the beans soak 48 hours and rinse them at 24 hours. I don't know something to think about.
I loved all your advice thank you and I subscribed

I didn't want to because i wanted the convenience of opening a can, but reluctantly i did after soaking them overnight, and to my surprise i had no issues with the ones i cooked myself. Ajwain is called as carom seeds. One spice you forgot is aseafoetida or hing in hindi. Ajwain should be added while simmering to have best results. Hing should be added to the seasoning.
Should be?
I would have never thought of putting Kombu into the cooking water! Very interesting. I'll definitely try that tip ^^ thank you!
I soak my beans for 3 days changing water every 12 hours with rinse . That does it for me . Then I cook then in a slow cooker until they turn creamy .
Woah. Three days. Ifn two days doesn't work then I will try three. Thanks.

Aw thank you for your kind words-and for subscribing! Means so much! I’ll have try adding cinnamon to my black beans 😊
Could you please elaborate on the baking soda remark you made?
@@GeorgiannaMartinSure! Soaking the beans overnight in baking soda is supposed to help reduce bloating and gas, but last week I forgot to add it to the soaking water (discard afterwards), so I just added a little baking soda while the beans were cooking. The ratio is approximately 1 tablespoon of baking soda per 2 cups of beans. Hopefully, that helps. Blessings!

I'm praying this will work. I've basically stopped eating beans because of the gassiness and other issues but if I can eat them without the negative stuff it'll be a game changer because I love beans and used to eat them like crazy (until I realised they were a big part of what was messing up my stomach).
Thoughroughly rinsing canned beans works really well too

Don’t forget the couple of drops of Lugol’s solution (iodine), does a chemical reaction with the sugars so that they don’t cause gas. That’s the reason you can soak the beans with a large piece of seaweed - same purpose. Just be sure to thoroughly rinse the beans after soaking with the iodine so you don’t eat too much of that.
Cool!
Did you just add some drops to the soaking water?
@@CK-vp6hh Yes, just 2 - 3 drops of Lugol's solution in the bean soaking water but not more than that. Then just rinse beans thoroughly after soaking. Then you don't have to mess with the Konbu seaweed

@marionbartley214 there are various methods. While many do not discard the bean water, you absolutely can if you prefer.
I use Apple cider vinegar when I finish cooking it. It seems to help the gas. Love your suggestions.
Thank you for helping us vegans stay strong 💪🏾 💨
Aw, thank YOU for being here 😊
Thank you for this channel.
I love this! Thanks for sharing- and for being here. 😊
