Just left NOLA yesterday after a (way too short) vacation. It was my first time visiting and aside from the heat, I could stay there forever. Just hearing y’all speak does something for my heart. Traveled for my career. Ended up in New Orleans and south LA for many months. Dang, Cajun food is the best food on the face of the earth. One of my staff members was from Lafayette and was 100 percent to the bone Cajun. She taught me how to cook gumbos, etoufees and red beans and rice. Most requested dishes in my family.

I have some of those red beans. I'm a small sized prepper grand person. I am a Texan that makes the best pintos this side of San Antone. God bless you CUZZIES! so I'm using pintos. They are more pale and fresh. That's a big deal regarding cooking time, according to the mexican girl that taught me how to make them. We were both poor in south tejas at the time. I don't pre soak unless high up. I'm missing high up. It's hot here in NW Oklahoma.
You got to wash and pick your beans before putting them in your pot because there are usually dirt and rocks in that bag. Take it from a NOLA girl, wash and pick those beans and leave out that tomato sauce/paste.

Tomato paste in red beans?🤔 where yall from? Trinity is onion, bell pepper, and celery. Garlic, parsley, and green onions are added at different times throughout the cooking process to add depths of flavor Also, turkey necks weren't an original meat used in Louisiana red beans. The meats of choice were pickled meats, tasso, sausage, ham bones. Red beans came about as a way to use up those different meats on a monday by adding them to something that could cook low and slow while you ran errands, cleaned the house, washed clothes, etc. Thats where the Red Bean Mondays come from. New orleans native here❤❤❤ Beans looked great though Also try a sodium free chicken stock or veggie stock. Those turkey necks and bacon have a ton of sodium already. And bouillon powder is also very salty

Looks delish. You guys put a lot of meat in that pot. I don't use turkey tails anymore because they aren't as meaty and are very expensive. So I have been using smoked beef sausage. I plan on using smoked turkey wings next I make a pot. Great job 👍👍👍😋😋😋

As a Texan, I learned how to cook pinto beans, with pepper, salt pork and caldo de pollo(chicken bullion)...This recipe is similar, but I love your red beans and rice too ! :)

Good JOB guy!! Here's a tip, don't use your knife blade to scrape the veggies into the pot or to cut open the plastic bean bag....you will dull the blade. Use the backside of the knife to scrape the veggies off the cutting board and keep a scissors handy for cutting open plastic bean bags.

Damn! LA is hot to begin with, and you guys go to fires LOL! I grew up in Vermont where when I was a kid, 20 below zero was normal for a couple months. It has gotten warmer over the years, but damn! I believe that's a Lodge 14" "camp" style dutch oven...14 inches in diameter across the top.........deep model not the shallow bread oven..........2.25 gallon capacity.......approx 250 ounces or 9 liters/quarts. Mine has a heavy rimmed lid that you can place hot charcoals on top of to make it a real "oven".
It’s a 18 quart Cajun Classic! I know the pot you’re talking about with the heavy rimmed lid! Unfortunately mine just has a regular lid! But it does the job!! Thanks for watching and commenting my brother!!
I guess firemen don't have time to sort and rinse their beans. Besides, I hear eating little rocks and dirt and things builds character. I always add a little Zatarains liquid crab boil too. I don't add tomato paste, but Satchmo added a whole can of tomato paste in his, so I can't say it's wrong - just a matter of taste. Good Job for a couple amateurs. Just kidding! There's no accounting for taste. Seriously though, I like how you layered the flavors by staggering when your vegetables are added. This works with Chili too. Chef Paul Prudhomme taught me that back in the 70's. C’est Si Bon!
The Camilla Beans are pretty clean not saying they don’t have any little gremies in there but like you say it builds character! lol may have to try the crab boil out! As a Texan, I learned how to cook pinto beans, with pepper, salt pork and caldo de pollo(chicken bullion)...This recipe is similar, but I love your red beans and rice too ! :)

Good JOB guy!! Here's a tip, don't use your knife blade to scrape the veggies into the pot or to cut open the plastic bean bag....you will dull the blade. Use the backside of the knife to scrape the veggies off the cutting board and keep a scissors handy for cutting open plastic bean bags.

No not really! @dg1019 I do use it in some dishes when I cook but when I cook with Clarence he like to cook with it!! I actually don’t like celery that much! But I do like to eat!! lol thanks for watching

Damn! LA is hot to begin with, and you guys go to fires LOL! I grew up in Vermont where when I was a kid, 20 below zero was normal for a couple months. It has gotten warmer over the years, but damn! I was in the Infantry too. Fort Bragg and Benning (visited Polk as a civvie) in that heat and humidity with a helmet and ruck! Prayed for night time! Thank you for the videos, be safe and take care.

A simple, but good full meal with fresh juice, beef, chicken or pork, simple salad, beans and rice costs about 2.50 USD! Less than a dollar a beer. 10 USD, you eat fancy! What did you do in the military? I was Infantry and loved it.

I believe that's a Lodge 14" "camp" style dutch oven...14 inches in diameter across the top.........deep model not the shallow bread oven..........2.25 gallon capacity.......approx 250 ounces or 9 liters/quarts. Mine has a heavy rimmed lid that you can place hot charcoals on top of to make it a real "oven".
GREAT oven for cooking for a big crowd.......that's 25, 10 oz bowls or 30+, 8oz bowls or servings

I guess firemen don't have time to sort and rinse their beans. Besides, I hear eating little rocks and dirt and things builds character.
I always add a little Zatarains liquid crab boil too. I don't add tomato paste, but Satchmo added a whole can of tomato paste in his, so I can't say it's wrong - just a matter of taste. Good Job for a couple amateurs. Just kidding! There's no accounting for taste. Seriously though, I like how you layered the flavors by staggering when your vegetables are added. This works with Chili too. Chef Paul Prudhomme taught me that back in the 70's. C’est Si Bon!
The Camilla Beans are pretty clean not saying they don’t have any little gremies in there but like you say it builds character! lol may have to try the crab boil out!
