  • THE PERFECT RED BEANS AND RICE STEP BY STEP VERY DETAILED GREAT FOR BEGINNERS
    INGREDIENTS FOR BOILING BEANS
    1 cup of red kidney beans
    22 cups of water (in total I added)
    1 tablespoon of oil
    2 garlic cloves
    1 green onion
    INGREDIENTS FOR EPIS ( SMALL AMOUNT)
    3 different colors belle peppers (small pieces like you see in the video)
    4 garlic cloves
    1 green onion
    1/2 cup of parsley
    1 bonnet pepper (optional or less depending on spice level )
    1 Maggie cube
    1 Sazon package
    2 tablespoon of vegetable oil
    Epis video
    • THE BEST HAITIAN EPIS ... • CARIBBEAN SEASONING|| ...
    INGREDIENTS FOR RICE
    1/2 cup of oil
    1 chicken flavor bouillon (Maggie)
    2 teaspoons of salt
    1 teaspoon of a adobo
    Thyme and parsley tied together
    1 bonnet pepper ( optional )
    1 13.5oz can of coconut milk (any brand)
    5 cups of beans water
    4 cups of jasmine rice ( I used madame gougouss jasmine rice)
    1 tablespoon of butter
    1 Teaspoon of black pepper (optional)
    INSTRUCTIONS
    Step 1
    Pick through your red beans then wash them thoroughly. Put the beans in a big pot and add 17 cups of water more if desired.
    Step 2
    Put the big pot on the stove at high heat 8/9. Add
    1 tablespoon of oil
    2 garlic cloves
    1 green onion 🧅
    Let beans cook for about 1 hour and 30 minutes add more water if need ( I added 5 more cups of water)
    Step 3- while beans are boiling make the epis
    In a blender or food processor add
    3 different colors belle peppers (small pieces like you see in the video)
    4 garlic cloves
    1 green onion
    1/2 cup of parsley
    1 bonnet pepper
    1 Maggie cube
    1 Sazon package
    2 tablespoon of vegetable oil
    Blend all the ingredients together until everything is nice and smooth then place it into a container that has a cover and put it in refrigerator for later use.
    Step 4
    Once the beans are cooked strain them reserving the water that was used to boil them. AGAIN DO NOT THROUGH WATER AWAY RESERVE IT FOR LATER USE
    Step 5
    Put a medium bowl on the stove at medium high heat 6/7. Add 1/2 cup of oil to the pot when the oil get hot add 2 tablespoons of a Epis(the creole seasoning we made prior) let the epis fry in the pot for about two minutes then add the beans
    Let the beans fry in the epis for about 2 to 3 minutes then add
    1 chicken flavor bouillon (Maggie)
    2 teaspoons of salt
    1 teaspoon of a adobo
    Mix all the seasoning into the beans then add
    Thyme and parsley tied together and
    1 bonnet pepper
    Mix well and let cook for 1 to 2 minutes (make sure you are scraping the bottom when you’re mixing)
    Then add one can of coconut milk let the coconut milk cook for about 4 minutes
    Step 6
    Add 5 cups of the water used to boil the beans in to the pot and let that cook until it begins to boil. Once the water start to boil add 4 cups of rice into the pot. Mixing the rice into the water as seen in a video. Let the rice cook for 4 to 5 minutes.
    When water is almost absorbed by rice turn down heat to low heat three or two add 1 tablespoon of butter And 1 Teaspoon of black pepper (optional) mix the butter until it has dissolved into the rice. Cover the pot with aluminum foil and cover the aluminum foil with a lid let cook UNDISTURBED for 30 to 45 minutes.

    I am a white American woman and this is one of my most favorite dishes! I had a very dear friend who was Haitian and she used to make this for me ALL the time. She invited me to her house and tried to teach me how to make this but she didn't use measurements and we talked & laughed about so many things I couldn't remember what she did teach me LOL. I noticed you didn't use clove or did I miss it? She told me clove was commonly used in Haitian cooking. I can't wait to try this. Your instructions are very good, and it seems like I might be able to finally make this.

    I have tried making this rice for the last 5 thanksgiving’s for my Haitian husband and this is the 1st time it came out perfect. Thank you for being so thorough and giving us step by step. If you follow this recipe it will come out perfect.

    Would adding some chicken work if I eased up on the bouillon? I love adding chunk meat to these kinds of meals.

      No Friend just sub it for adobo or more salt don’t but chicken in it. You should make the chicken on the side and serve it together.

    Does the type of rice matter? Basmati, Jasmine, long grain etc.?

      You can use any rice you like. However, each rice requires a different amount of water. Jasmine is 1 1/4 per cup; basmati is 2 to 1; long grain is 1 1/2 percent cup of rice. Hopefully that helps
