      @@jodycookingg I understand you never visited Guyana so you will not know that is understandable. SEE, each culture has a different name for the very SAMETHING. ONLY Jamaican cook their food with Red Bean We (smile} we cook the something with any bean. I guess that is they calls that region Caribbean, SHARE different of Beans in their foods. Later

    I’m from Martinique & Guadeloupe (French West Indies) and I cook it the same way. Rice and Peas is my favorite meal : i could eat this everyday. Bip Up to all the Carribeans !!! One Love ✌🏽💪🏽👍🏾

      West Indian is it's more accurate as it includes Guyana and Belieze and we have similar food and culture and part of the common wealth . Caribbean is a woke term from the past 15 years by young West Indians living overseas .

      @@celticmulato2609 Caribbean is just fine stop trying to create an issue where there's none. If you wanna be technical Guyana isn't even a part of the West Indies or the Caribbean. It's a part of South America.

      @@slimthickaz. Guyana though in South America are considered West Indians, just like Belieze which is in Central America, are considered West Indians and have always been. Thats been technical as they are part of the common weslth and are West Indians, not Caribbean. Its obvious you dont have to be in the Caribbean sea to be West Indian as its now obvious to you with the countries mentioned above.
      The term Caribbean is only recent to label West Indians ( within last 20 years by some) and not all the islands in the Caribbean are West Indians, ie. Cuba, Puerto Rico, Dominica Republic the island Hispaniola which is shared with Hait are not West Indians.
      Furthermore, when there is a cricket match or football game, it's West Indies vs. whatever country.

      I thought that is Jamaican favorite Rice & Red Bean, I am originally from Guyana, I used to live in Boulder, Colorado ONLY 2 Jamaican live there, we used to visit one home every Friday Night Rice & Red Beans, he will cook every Friday Night. Danver has few more Jamaican, In Guyana we cook the SAMETHING we call it "COOKUP RICE" we can put any beans inside the cook up rice.

      @@ananmai8700 You're right about not every mother being the same. When you're in Jamaica though, the knowledge is so general, even your neighbors would tell you if asked, but every one might add a certain twist to how they do it. Most jamaican people are naturally helpful unless they have a personal vendetta against you to not help you. Maybe It's because I'm from the rural parts and it's expected that you know how to cook at a young age. There are just stuffs especially as a girl that you're taught to do to support your future family aside from being educated, ambitious and strong. My mother would always say that your husband heart's rest in his belly, make sure he anticipate coming home to eat each evening, she was right. I must admit that i was inconsiderate to not take into account that every mother might be different, but it's still a disgrace if not for a valid reason.

    British hobby foodie here who loves cooking other culture's foods. I've cooked a load of Chinese, Japanese, Indian types cuisines, but always hankered to cook Jamaican. Curry goat, beef patties, rice and peas, all the classics. I've looked at a LOT of "rice'n'peas" recipes, but yours is the purest, simplest, unpretentious, genuine sounding.     You know what I had to hold off till I had made this twice so I was 10000% sure - and both times it was the BESSSST rice n peas I’ve ever tasted. You guys must try this.       100 percent is the maximum. This is complete, otherwise knows as all, the whole or everything.
      There is no 10000 percent. You shouldn't spread ignorance. This is very very basic math. If you don't understand this, then it means that all your brain-power can fit into one of those rice grains.

    Years ago I had several Jamaican friends that made the best curry Goat, oxtails and rice and peas and taught me but I haven't made in a long time and I forgot. Now I see this video and it's right on point. Going to add oxtails and rice and peas to my turkey day menu. THANKS!!

    As a Guyanese, I cook my rice and peas the same way I make cook- up -rice but without meat. As well as fresh thyme I also add fresh basil and tomatoes.

      No you don’t of to, but soaking overnight will allow the peas to cook faster but either way❤️

    As a Guyanese the real coconut we use beacause it brings out a more nice tast than the tin milk i love red peas cook up rice that's my favorite rice❤🇬🇾

    Rice and peas always makes me think of our Surinamese version. We use several kinds of peas/beans mixed with or without meats/fish to make versions of what we call Moksi Alesi. Served with fried plantain, cucumber or preserved limes and some kind of hot relish.

      @@jodycookingg Jody it came out pasty and suggestions when I had the bubble up I put in the rice. But it was hard after 20 mins on low I added about a cup more water and it was like paste. It tastes good but looks ugly. 😂 😢

    Definitely gonna try it your way. I grew up on sinking my peas first in cold water then add more cold water after water come to a boil to sink the the peas or soak it overnight. Yours came out really Shelly .

      I used to doit like that also soaked it over night.But you can also doit difference ways,The reason i add the hot water it boil more faster.Thank you hope you enjoy it😘🙏🏾

    Same as Mexican rice and beans. Delicious peasant food made throughout the world in some way or other. Basically pre cooked pulses added to rice with whatever spices and herbs you like.

    I'm so grateful for these recipes. It's expensive to buy from restaurants here in Sweden so I wanted a cheaper substitute! Didn't find scotch bonnet so used habanero instead but it turned out amazing!

    Well your rice and peas is very seasoned, I have never seen someone put black pepper in Jamaican rice and peas since Scotch bonnet pepper will be added but I guess that's something I would like to taste. Another thing, the pimentos are usually added while you're adding the coconut milk and seasoning but I guess it will taste the same if the flavor of the pimento isn't sensitive to degrading after long heat exposure. To sums it up, your rice looks great, I would like to try it.

      Awesome🙌🏾 I’m so hoping if you do try mines it comes out great try not to add too much liquid when the rice is cooking make sure the liquid is not too much above the rice otherwise it will comes out sagging if you do have lot of liquid above the rice you can always remove it ok👌🏾please let me know your feedback thank so much for watching🥰

      Maggie Cheung. Think about the rice you are using a good basmati will give you a good outcome and you can always add water but you cannot take it away so if you think you have too much liquid take some out and keep adding it until the rice is cook a fluffy. You can also put foil over the top before putting the cover on but this is once the liquid as gone down. I am 80 and as been cooking this since I was 10.

    Yes Jody your rice reminds me of my moms watching her cook all my life I realized fresh kidney beans give the water that red color not the can ones and I don’t use them because the taste isn’t the same to me you’ve definitely gained a new subbie

    Thank you for making the peas on top of the stove. Everybody's been using a pressure cooker and my father always made pinto beans my mother makes plenty of beans and peas green peas always on top of the stove so took a long time for me to find that also if you don't have pimento berries can you use a little bit of allspice? I couldn't find them anywhere because it's so close to the holiday.
    Everything looks so good.
    Going to try & Jerk my turkey for the first time.
