Trying to clear out the cabinets because we might be moving so I came up with variation and it was awesome. I mixed this recipe up a bit because my gf and I like it hot: Both my gf and I love cooking so we have an entire cabinet dedicated to various spice and several of our own blends. Didn't even think of using the pressure cooker.
    3 cans red kidney beans
    I used:
1 Can dark red kidney beans
    1 Can Garbonzo beans
    1 Can chick peas
    1 Can corn
    1 Can golden mushrooms
    3 1/2 cup Basmati rice
    2 stalk scallions
I used a small red onion, chopped
    3 cloves garlic
    1 tsp pimento seed
    didnt have any so none
    1/2 tsp fresh ginger
    couldnt find any so none
    1 whole scotch bonnets Pepper
mixture of pepperoncini and jalapenos (lots)
    1 tbsp fresh thyme
    1 tbsp unsalted butter
    1 can coconut milk
I very much dislike coconut so I just used whole milk
    1 tsp All Purpose Season
Hefty dose of creole seasoning and 'slap ya momma'
    1/2 tsp salt
    I added more to taste
    1/2 black pepper
I added more like a TBS
I also added white and cayenne pepper
    1/2 tsp garlic powder
    2 1/2 cup water
I used ham broth instead made from the last bone-in I made
