  • Jamaican Rice & Peas using Canned Beans and coconut milk, it’s quick and easy but with the same great taste!
    Brown Stew Chicken Recipe

    Authentic Jamaican Rice & Peas Recipe
    • Authentic Jamaican RIC...
    *Ingredients*
    2 Can of Kidney Beans
    1 Can Coconut milk, Powder or Cream
    Scallion & Thyme
    4 cloves chopped garlic
    Whole scotch bonnet pepper
    Salt to taste
    1 tbsp Jerk Seasoning or all purpose seasoning
    1 tbsp Sugar (optional )
    1 tbsp butter
    3 cups Rice
    *1 & 1/2 cups of liguid for every 1 cup of rice ratio
    *Steam rice on very low heat as cooking too quickly will cause the pot to dry out and the rice will still be uncook
    If Rice is uncook after the water dries out, add a bit more water cover with aluminum foil and allow to steam some more

    I have not been able to get this right for nothing over the years. ALWAYS ends up mushy and as a person who takes my food and cook serious, I’ve been able feeling some type of way about it! Lol but I’m not a quitter so…..let’s hope I get some Mothers Days luck today! Thanks for this video!

      A regular whole pepper could also be use if Scotch Bonnet is not available

      I just use habanero peppers if I can't get to a West Indian grocery. most stores carry them

      The trick to perfect rice is double the liquid to the amount of rice. So 2 cups of rice to 4 cups of liquid then let rice come to a boil stir then turn on low 15-20 turn off and let sit 5-10 min before fluffing.

    I always wonder if the liquid should stay or go not sure if it had a taste to it that would throw off the taste of the rice n peas or not. Glad I found this videoo

      Liquid stays… just as how you wouldn’t strain a can of soup or a can of evaporated milk.

    Hi racquel, what do you do with the tyme, pepers and scallion after cooking? Just take it out or leave it in the rice?

      I take them them out and throw them away, while other persons would leave them in, they have done the job by flavoring the pot.

      Coconut milk is what really gives Rice & Peas its distinctive flavor, it’s a must for me… but you could use butter instead.

      Any whole hot peppers could use, the whole pepper gives it a pepper flavor, while the sauce may have it too spicy 🥵

    If the ratio is 1 + 1/2 cup of water for 1 cup of rice how come you only used 2 cups of water for 3 cups of rice?

      1 & 1/2 cups of liquid for every 1 cup of rice.
      2 cups of coconut milk was also added, that is considered liquid.

      For 3 cups of rice going by that logic 6 cups of water needed… 2 cups water added, 2 cups from coconut milk and where do last 2 cups come from (?!) is it liquid from 2 cans of beans.? I’m going to make it with 1 cup of rice so would like to know exact measurements …. Recipe looks nice :)

    Came out bland 😩 What did I do wrong? I couldn’t find scotch bonnet peppers so I skipped it, and I just guessed how much scallions and thyme trying to match the video. Would that make a huge difference? 😢

      The scallion & thyme gives great flavor but the coconut milk is really the star of the show… did you use coconut milk ?

      Yes, I used coconut milk 😩 I think maybe I used too much rice? It said 3 cups of rice, was it supposed to be maybe 2?

      You have to taste the food as you cook so you can make sure it is seasoned to your liking.

      Do you rinse a can of soup as well ?
      If you rinse the beans, then you wouldn’t acquire the color needed for a pot of Rice & Beans 🫘
