    A little onion some spring onions, thyme fry in a little oil just until they star to get brown. Then add your liquid mix two cups water one cup peas water and in to that add two tablespoons off coconut milk. Bring liquid to boil. Then add paper rice and peas to pot gentle stair. Lid on and bring to boil for ten minutes. One last stair and slower heat to lowest with lid on liquid should have dry out a little with clean cloth over top of pot put lid back on and cover lid with cloth saw that pot is sealed steam rice for 15 minutes turn off heat and leave to stand for 15 minutes more. Rice done yummy 😋

    Tip no. "1 and a half" ...remember to thoroughly wash your hands immediately after handling that scotch bonnet pepper.... don't want to inadvertently touch your eyes or face with that on your hands 🤤

    HiChrvideo as usual! I usually tie a few sprigs of fresh time together with cooking twine. That way I can fish all of them out at the end without hunting through the rice.

    Chris, that's the same way all my Trini family members cooks rice & peas/peas & rice. We always wash dry beans, then soak it overnight & will use that same water, we never threw it away. Chris just love how your recipes are not complicated. Thanks

    Hey Chris, great tips
    I tried this recipe and it was deliciously. One question though, the next day the beans were quite starchy and the rice as well- what did i do wrong? I even turned the heat off while it was still a bit moist in the pot
    Help!

    This is definitely a Trini take on Jamaican rice and peas, I have never seen a Jamaican cook it that way so your version isn’t the normal version that I know but maybe some make it like this especially the Jamaicans that live outside of the island, but this is definitely not the way most of us make it in Jamaica the end result looked like it and I am sure you enjoyed it. Thanks for sharing this take on it.

    Interesting to twist to making rice and peas. I prefer home made coconut milk. My mother uses home made coconut milk. I will try it your way and I can smell the flavours coming through the screen. 👍🏾👍🏾👍🏾

    THANK YOU!!!!! I followed your steps (except for the fresh coconut milk and i had to substitute scotch bonnet with jalapeno) and my rice came out very good especially for the first time.

      How much water and rice did y'all use? I understand that carribeans don't measure (my grandmother's family is from the islands so my mom was always like that as well), but I like to measure because when I don't, my food still tastes good, but then I don't remember what I did when I make it again. Any suggestions on the measurements in this video?

    Hi Chris great video but I have a question with the liquid to rice measurements. I know rice can get very particular when it comes to liquid measurements. It seems as though your eyeballing the rice to liquid measurements so what would u recommend for someone who isnt the best with that?

    That look delicious, just like Haitian rice and beans! Only difference is we mostly start off with green seasoning made from the same ingredients & some of us boil the beans in a separate pot and some use the same pot, as done here.

    Never stir the rice once you put the lid on to cook for a certain period of time as any rice recipe will suggest. The only time to stir the rice is before placing the lid on and when it's done cooking when all the liquid has been absorbed by the rice..... that way it will not be gooey...it will be loose and fluffy. It's temping to want to stir it....but it will be a disaster.

      You can stir it, as long as the water is full .once the water starts to evaporate leave it alone.

      Mine tend to start sticking to the bottom of the pan even when theres enough water so it tempts me to stir. Why is it sticking to the bottom? 😔

    I have a question,how many cans of coconut milk do you use when making a big pot when I'm using like 4-6 cups of rice? and do I use more spices and herbs? what about the water? do I still use the same amount,as I would for just making regular rice?

      try not putting too much fluids, different rice take different amounts of fluid.

      Most canned foods don't have preservatives as the canning process is used to preserve and you can also get low or no sodium added- and you still want to rinse your beans.

    When you use canned peas you can rinse them off or if you don't rinse them all you have to do is
    Don't add any salt and it's perfect.
