Thank you Latifs. Great idea doing the tomato sauce in the left overs in the pan at the end - I always put the tomatoes into the main sauce, but doing it your way you still have solid tomatoes.
Good job Chef, that chicken rogon josh looks the real deal, and also thanks for doing these recipes for those of us don't make base gravy's, you have to be the first, well done, now we can create something that resembles Indian food at home. Thanks again, and the best tip I've learned is the use of water in the curry, who would have thought it.
Although it takes a bit longer to cook while making a video explaining the process it's amazing to me how such fantastic dishes can be turned out cooking from fresh and getting them to the customer's tables fast enough to avoid them waiting hours for their order. It's really impressive and that Roghan Josh looked heavenly. I'll definitely make that very soon. Thank you Latif.

My dishes are Sri lankan so quite hot and lots of coconut juice. Maybe a quick guide on Bangladesh style flat breads would be interesting levenened and unleavened.

A quick question - what do you do with all of the whole spices (bay leaves, cinnamon, etc ). Do you just leave them in the curry when it’s done or do you generally remove? I grew up on most of these dishes as a child living in Australia when we didn't even have a single Asian restaurant in our city (a while ago). Watching you is like being in my step-nanna's kitchen! Awesome Latif :) This is my fav dish to cook although i love it with lamb or beef. Usually cook it authentic kashmiri way and its more like a stew and def doesnt taste like restaurant style although i have found restaurant tastier so maybe my cooking needs to improve :)

Hi Latif, can you please suggest what sized aluminium pan to use. Measurements of pan across the top, and depth, For 2 plus people. I am using a normal non stick pan, and that ain't good enough in my world! I know this will make a difference, as you can't get the caramelized stuff going on in a non stick...please help! I'm wondering curry powder and all those spices suggest used equivalent weigh of garam masala turmeric and chilli powder to taste as as garam masala has a lot of the spices that have been doubled up...
