Many moons ago, I went to an Indian restaurant in Palm Springs, California while on vacation. Had no idea what to order and told the waiter to choose for me. He served me "chicken makanwala". It was so delicious. 😍 I told him that I would like to thank the chef and if I had permission to lick the plate. It was that good. So good in fact that I returned the next day and had it again. I have never forgotten that meal. It's one of the best I've ever had. I've always wanted to recreate it. And today on my birthday you, Latif, delivered the best birthday present ever. Thank you❗♥

I used your Tandoori chicken recipe and cooked the chicken two days before, and made the gravy yesterday. When it hit the table today everyone was amazed at the flavor! I served your “easy” veg pilau as a side with fresh naan bred. This is the first time I’ve ever cooked this type of food and it turned out amazing. Thank you for the clear instructions and for sharing with us all!
Made this 6 or 7 times. Always going back to it because it is so, so good. Swapped out the chicken for paneer for veggie family members - they loved it. Make it with Persian steamed rice and it's class.

Yep. Very expensive dish to make now in 2024 with a tub of Lurpak £7 plus the chicken of course and other ingredients. I made quite a large quantity and froze 4 tubs so worked out OK. Was delicious
I made a big pot of this today. Had no fresh coriander nor ginger and nearly forgot to put the sugar in. And it is still beautiful. Thank you so much, Sir, for an outstanding recipe which I look forward to making again with the ginger and fresh coriander. Chicken Makhani for ever!
Ha....I had the very same problem here in Eastern Canada....the indian cuisine is absolutely garbage. Latifah just may have saved my life....praise be to Latif!
Even here in the Raleigh, NC area, we have some of thebest Indian around. Worked in the UK for many years and ate Indian while there. Our Indian and Nepalese restaurants (many family owned) here are as good as the UK if not better. You can tell the great restaurants by the number of Indian university students who frequent them to get a taste of home!

So authentic and much appreciation to you my friend. Not often are the restaurant chefs willing to share their recipes. People do not appreciate the effort put into a curry like this and until you make them yourself you do not appreciate how easy it is to mess up! It takes patience and mastery to get right like this 👌 notice how chef waits for the gravy to cook properly and release the flavour rather than getting impatient and greedy instantly blending. Your videos are incredibly helpful and your curries always taste delicious. Just a quick question though as I make a lot of curries at home: the powder made from toasted corriander and cumin seeds, how long does it keep in a bag? Is it better to make this fresh or can I batch pestle and motor it for multiple curry use. Thank you
Best to roast fresh each time, when roasting just a few tsp in a dry pan it takes very little time but packs the best release of the flavour oils which carries through your dish best. Why it's best really to buy your spices raw and toast yourself. You can really tell the difference with ground coriander/cilantro. Prebought and freshly roasted and ground has such different flavour profiles.
I suggest you used a wooden spoon . My ears ache for the sound of the steel spoon scraping the saucepan. Some accompanying soft music compliments wpuld be preferred.

I’m a pretty good cook and I made this right along with you and oh my gosh it’s divine I crushed the almonds after they were toasted and blending them in the blender and added it to the butter in the oil with the sugar marinated the chicken it was it is the most delicious dish. Thank you.🎉❤🎉
