For those of you wondering why onion or garlic is not used in this dish, please note that the original preparation as made by Kashmiri Pandits does not use onion, garlic or tomato. If you come across a version that has any of these, it is not original Rogan gosh. Most restaurants do not serve the original stuff.
I am a Kashmiri pandit and i can tell you we do use ginger garlic and onions to prepeare rogan josh. this is by far the worst recipe i have seen of roganjosh
@@powerNify Chandramukhi Ganju ruclips.net/video/luy5UGD4Qaw/видео.html This roganjosh is Kashmiri Hindus version. May be some people add almond also but i have given recipe the way I have learned from my mother. You can add pinch of powder Hing or few drops of liquid hing. It depends and varies with the quantity you are making. Roganjosh Serving size: 2 to 3 people Ingredients: ½ kg or1 lb leg or shoulder portion of lamb or goat meat/mutton 2½ tsp red chilli powder 1½ tsp ginger powder 1 tsp fennel powder 1 tsp white cumin powder 2 tbsp yoghurt 3 crushed cloves 1 stick crushed cinnamon 2 bay leaves(if available) a pinch of asafoetida 2 crushed black cardamoms 5 cardamoms 3 tbsp of cooking vegetable oil salt to taste or ½ tsp
Whether its an authentic Rogan Josh, or lamb curry, if it tastes great, ( and it cerrtainly looks that way ),who can knock it? As, it has all the ingrédients of indian cooking. Its juste another ' façon de faire ', another angle. And why not ! Thé only criticism is the use of a metal spoon on a teflon pan!
Great recipe and Excellent presentation. I'll try to make this recipe as per your awesome demonstration, and upload it for your kind perusal . Thank you for sharing such a useful video and fantastic recipe
Excellent! And if you don't have lamb or don't like lamb do the veggie rogan josh. You won't miss the meat! Kashmiri chili powder is available at any Indian grocery in the US. And so are the whole spices. They can be frozen for later use.
Can we remove the background noise which is under the guise of music, not only is it annoying but it masks the voice and makes it quite difficult to concentrate
0:32 Rogan Josh may be a Kashmiri dish, but Chillis aren't, they come from Central America, as do the tomatoes you later use... The original version used neither. But I digress, I love Rogan Josh! Thats why I'm here :)
Brent Perez , true let no one care but please don’t call it rogan josh, name it cinnamon josh l also don’t care; and thats what people over here r trying to say.
You should care. If you go to KFC and ask for Fried chicken and got Grilled chicken would you care? If you asked for Alfredo sauce and got marinara sauce in an Italian restaurant, would you not care?
Atul is a great cook but is this a Rogan Josh? The way this is made must be a different dish altogether. I would add green and red chilli slices to the yoghurt mix. I think the spices should be sieved out after the flavours have come out into the oil. A bit of butter and a bit of mustard oil and English mustard paste to give it a little punch. Indian food has pretty much always been made with mustard oil.
this is a good curry definitely not rogan josh. onion has no place, nor garlic nor yogurt. You didn't use fennel, ginger powder, saffron, heeng and cooked in ghee not in that stupid refined oil...please don't spoil the name of the dish. Rogan Josh stands for authentic Kashmiri cuisine, not this 'dhaba style karahi mutton' you made.
Sorry but I genuinely believe that this mutton curry really lacks the rich and sumcioous aesthetics of a traditional rogan josh. Whilst the inclusion of onions may not be bad and is now a common practice amongst the modern version of the dish, I respectfully disagree with how you've oriented other extravagant ingredients to make this classic. ☹
Your non stick pan has lost its quoting totally. Should’ve paid attention to it. Totally unhealthy cooking this way though your diction and recipe is good.
Oh boy! That’s making mockery of Indian Traditional Cooking... you could alter ur dish to the English pallet... but just don’t kill the essence of its natural origin..
This is not rogan josh, you added onions, ginger garlic and tomatoes which is not used in Rogan josh , you skipped fennel seeds powder and ginger powder which is the heart of Rogan josh also it's Cooked in mustard oil, please this is not rogan josh
I am sorry to dissappoint his fans but this guy may have a successful curry house but does not know how to cook a decent curry. Like many other so called cooks on the U-Tube he has used all the spices he could get his hands on and cooked a watery nondescript curry. To prove what a bad cook he is, let me point out that he does not even have the common sense of not using a metal utensil in an expensive non-stick pan as you are going to ruin it in no time at all after repeated use.
This is just mutton curry with fennel. he didn't even use 'Ratan jot' and used Tomatoes. Rogan josh is supposed to be blood red in color not brown. This idiot will give you the same recipe if you ask him typical mutton curry.
Your cooking is good. Your rating is low due to weak filming. You need to get the camera high up to show the cooking in the pan. Name the spice as you put it and not after you have babbled on to the next spice. Take it easy.
Coriander seeds in a Roghan Josh? Please! Can we stop trying to pass off "our version" of traditional dishes as the "original"? I'd expect a trained chef to have more respect for "traditional" cuisine. You have the right to say this version tastes better than the original - but trying to pass it off as a "traditional" dish is a downright falsehood!
This is not authentic Rogan Josh. It is just the fake Rogan Josh that is served in Indian restaurants all over the western countries. This is NOT you will find in Kashmir or even in India. It omits the main ingredient, which is the "ratan jot" powder, which gives it its characteristic red color. This is just lamb curry! See the RUclips channel "Curries with Bumbi" for an authentic Kashmiri recipe.
... all these comments about authenticity are serious bs ... what is "authentic" ... there were no chilis in Indian cuisine until the Portuguese introduced them from South America ... where does that put your authenticity?
Traditional lamb rogan josh ,funny.. What a disgrace . Tips kashmiris would never use onions. They use shallot paste that the end. And garlic only for making maz ras. The cooking style he used is Indian not kashmiri
Where is the RatanJot . This is fake Rogan Josh. Coming from an esteemed Chef makes it worse. Chefs like you give a wrong idea about our food worldwide.
Great video. I love how you explain the benefits of the spices, etc 👍👌
That dish looks great Chef
I’m glad you added enough of oil to fry all the masala and onions 👏🏻👏🏻❤️🙏🏻👌
One of the best cooking videos I've ever seen! Made this tonight and was delicious. Thank you!

The chef is good but very important he should give exact measurements of ingredients.or should be displayed on screen.
You can not brown meat with onions in the pan!
Naughty! No onions!
Great video spoilt by the background music which is so loud that the chef's voice becomes background noise !
