That IS how she did it. The whole point of going back in time to the day of the event was to get Esmeralda to remember how she made the tower lean so that she could re-do the spell upon returning to the 20th century.
Esmeralda is similar to Aunt Clara, except that Esmeralda is hyperactively nervous, and a lack of confidence. It would've been interesting if they'd explored why she was like that. Aunt Clara's ineptness was due to age. This is another topic that BEWITCHED explored. It reminds me of an article that I read several years ago about some of the cast were at dinner. I remember Maurice Evens, Elizabeth, and others were at the dinner. It stated how much she respected older people and their life experiences. One can see that when Liz and Marion Lorne were together.
They were notably inconsistent with that particular plot device. Perhaps because she (Samantha) cast the spell herself to go back in time, she retained both her memory and her powers, but the rules on this were never firmly established. They were frequently changed to fit the narrative of each episode that featured action in the distant past.

Bonnano Pisano lived in the 12th century, so Esmeralda must have really been old to have dated him then.
