Ingredients:
Pork neck - 1 kg
Salt extra - 9 g
Nitrite salt - 9 g
Chili flakes - 2 g
Peppers - 15 g
Black ground pepper - 3 g
Coriander - 3g
Dry adjika - 1 tsp
You will need a thermometer to check the temperature of the meat.
Drive the temperature probe to the center of the product
Stage 1: at 50°C in the oven, reach 24°C inside the meat product
Stage 2: At 80°C in the oven, 55°C is reached inside the meat product
After that, pour boiling water into the pan. Stage 3 is coming
Stage 3: At 80°C in a convection oven, reach 69-72°C inside the meat product

Seit langem verfolge ich ihren Kochkanal. Wie immer sehr gutes Rezept. Habe mir extra das Gewürz Adjika bestellt. Einfach ein tolles Gewürz schmeckt super.
Werde es nach kochen aber in meiner Schinkenfee. Mal sehen wie es wird.

the stages are , in my opinion, not possible with current electric ovens where the minimum temp is around 80°C - 175°F. I guess we can add the time of the first "stage" to the second and make it 2 stages.
