    Hello Folks!
    I hope I find you all well. Tonight for tea, we had this tasty puff pastry top creamy fish pie - made with smoked haddock, cod and salmon, but use whatever fish you prefer. I like smoked fish in a fish pie :)
    I topped this one with puff pastry, but you could use creamy mashed potato if you prefer :)
    Everything I used will be below.

    What I used | serves 4
    Olive oil | 1 tablespoon
    1 Medium onion | finely diced
    Salt & pepper | 1/2 teaspoon each
    Butter | 45g (1.5 oz)
    Plain flour | 3 tablespoons
    Vegetable stock | 375ml (12.6 oz)
    Creme fraiche | 150g (5.2 oz)
    Wholegrain mustard | 1 tablespoon
    Grated parmesan | 50g (1.7 oz)
    Dill | 1 tablespoon - chopped
    Frozen peas | 200g (7 oz)
    Mixed fish | 350g (12.3 oz) Cut into chunks - I used haddock, cod & salmon.
    Milk | 1 /2 tablespoon
    1 Sheet puff pastry

    I love fish pie. I have always done mine with mashed potato too. I usually make it when the weather is colder but I always make it on Good Friday regardless of the weather.

    oh , Cheryl that looks delish and what an easy recipe , very clever , never thought of adding the flour and butter to the onions , roux , never made fish pie , doing the white sauce was a faff , but this looks so easy , thanks love your channel , hope you are getting some nice warm sunshine , bet the countryside is looking wonderful , my bat appeared for the first time to my garden at dusk last night , he's been coming every year for
    27 years now , as my garden is quite wild and unkempt he loves it , swopping down and about catching insects , must be a haven for him , size of a sparrow , but quite different flight , dusk is their time , I'm very much into nature , birds , bees and butterflies are my thing , thank you as always for sharing , give Jasper a big cuddle ❤😊❤😊❤

      I love bats. They are so maligned. They are good for the environment and we wouldn’t have rum without them as they are a pollinator.

      @@annegraham4307 I just had one in my apartment every year in my previous department. For 11 years. One year I had three, another year I did not have any, but that was the year I went to Puerto Rico at Thanksgiving and had one on my head! 😱

    Made this on Saturday it was lovely. I did change it and add cream and Scottish cheddar because thats what I like. I also layered my dish with mash then added the fish filling topped it of with the pastry it was smashing and so filling x

    In Tesco here in Shetland I often find bits of short dated fish that is really useable. Sometimes I actually smoke my own fish. Its a bit of a tradition up here and its not difficult if you hot smoke it.

    That’s looks good! I’ve never had fish pie, although I grew up in Edinburgh. I don’t remember my grandma making this. I’ll have to give it a try! Xoxo

    That looks wonderful!! Perfect meal for a cold, damp day! I've always used mashed potato to top fish pie, but puff pastry takes it to another level!

    HI Cheryl! Looks amazing and delicious. Just a suggestion (not a criticism) pre-poach your fish in some milk first, only for a few minutes not until their even half cooked, you can then drain this fishy infused milk for your béchamel, cutting out the need to add stock, plus I think a bit of garlic goes very well. I Hope you and any of your viewers try this and find this tip helpful. Thanks for sharing! 🙂😋😎❤

    Ohh I will have to use American ingredients but that is doable! Looks so good.

      The smoked haddock is hard to find here in the US and if you do it’s very expensive. I’ve used smoked white fish. Not the same but it does add that wee bit of smokiness which is really nice.

    For your fish, did you buy a mixed bag of chunk fish or whole and you chopped it up? And have you ever used tilapia or halibut?

      I've never uses Tilapia...don't think I've ever seen that here ☺ This was just a mix of salmon, cod and smoked haddock - you can buy it cut up and mixed already.
