Hello Folks!
I hope I find you all well. So tonight for tea a made this wonderful chicken Balmoral pie! I took a classic and put a wee bit of a spin on it :) You’d make this traditionally with a puff pastry top, but I think it’s delicious with mashed potato instead. You could add a wee dram of whisky to your sauce…but we prefer it without! But it’s completely up to you.

Everything I used - Serves 5-6
FOR THE PIE
* 3-4 Chicken breasts
* 1 Carrot - roughly chopped
* 1 Onion - halved
* 1 Teaspoon ground black pepper
* 2 Teaspoons salt
* 60g (2 oz) Butter
* 110g (4oz) Streaky bacon - chopped
* 250g (9 oz) Haggis - sliced or cut into chunky pieces
* 1 Onion - Finely diced (or a leek)
* 2 Garlic cloves - crushed
* 2 Rosemary sprigs - needles chopped
* 50g (1.7 oz) Plain or all purpose flour
* 200ml (7 oz) Double or heavy cream
* 1 Tablespoon wholegrain mustard
FOR THE MASH
* 900g (31oz Potatoes - peeled and cubed (I used Maris Piper)
* 30g (1 oz) Salted butter
* 75ml (2.6 oz) Milk or cream

That's a good idea, the mushrooms. I don't mind haggis but my wife would not have it.
I sent this to my sister and she asked what’s in haggis and I said I don’t know, but I do and then I told her I could order it from Aykroyd Scottish bakery in Detroit Michigan ,because I live in the states overnight. And I told her I love the sound of your voice it reminds me of me ma ,she was a war bride , she was a we bit of thing .

I Not only watch for the great cooking, I listen to the gentle Scot voice I have not heard in 65 years, same voice that of my Edinburgh born grannie had, who passed here in Australia in 1960, born near the Castle gates of Edinburgh in 1866.
Thats definitely happening in this house. First time I've ever seen that. I've had Balmoral chicken at a wedding but this is next level. And it's a 🥧. How absolutely perfect 🥰 thanks heaps for this. ❤

Me too! I’m part Scottish but live in USA and I just the accent.
My oldest son would have loved that. I lost him in December 2022 to an upper respiratory infection and complications of his dialysis. He was just 46 years old.

This pie would go down really well with my boys
My wife made this for dinner/tea this evening, and everyone liked it. Although I love Haggis, my wife and our three kids have never wanted to try it, so my wife said it was sausage when the kids asked, and they continued to eat it up, with two of the three kids having seconds. We'll definitely be making this again.

i add parma ham instead of bacon as the smell of cooking bacon gives me the dry boak. Also I do go for the cheesy tatties. It's such a versatile dish a few shallots , shrooms in the mix works well too

My gosh I haven’t had haggis since 1976. I agreed to try it as a teenager and it actually wasn’t bad.

Stumbled onto your channel. Love it. I live in the USA but my heritage is Scottish. I have been to Scotland once. My son loved it so much, he wanted to live there. Haggis was very good. This Chicken casserole is looking very Hardy.

Very interesting, the haggis addition Cheryl. I’ve never done that but will give it a go. Also never fried haggis, always just heated it up in microwave (that method which we love anyway) with gravy on top, neeps and tatties. (On holiday a few years back in Fort William we had WHISKY gravy with haggis, absolutely wonderful! )
That looks incredibly easy and delish! I love poaching chicken for chicken salad or for use in wraps or sandwiches. I bring my water, along with a few thin slices of lemon, peppercorns, peeled cloves of garlic, fresh rosemary, Italian parsley and thyme, all tied in a bunch, to a low simmer. Then I add chicken breasts or thighs(depends what I am using the meat for) I have allowed to come to room temp before adding. I let breasts low simmer about 30 minutes, thighs about an hour. Your gravy looked so good!
With a larger baking dish, I wonder, could you par cook your brocc and add broccoli first, then your chicken mix, your haggis and then the potato? Let the brocc finish off in the oven?

I would be serving the carrots from the stock on the side and mince the onions up and mix in the sauce. Like the idea of mushrooms instead of haggis!

I did a few contracts in Scotland and always loved the place for many different reasons, my favourite was staying in Broughty Ferry for a year , great bootchers and seafood shops, and this recipe is very typical of Scotland , easy and relies on the ingredients ...........mmmmmmmmmmmm

I would sprinkle 1/4 Cup of Grated Parmesan cheese after it bakes for 15 minutes. This will give it a golden colour and a wicked crisp texture.
Or mix in the cheese, with your mash!
Lil tip for poached chicken - allow it to cool in the pot of poaching water. It makes it 1000 times more hydrated and tasty. Try it out 👌

Oh, it looks marvelous! Our local grocery store here in Texas called H.E.B. actually has British double cream in a jar. I have wondered if it is the same as the double cream you have in your videos? Also, I have never had the opportunity to try haggis, but it looks so good and savory. I bet this tastes wonderful! Thank you for your videos, Cheryl. They are a bright spot in my week!

I'd save myself an hour's worth of electricity and use pre-cooked chicken, and use Black Pudding as my partner doesn't like haggis (sorry, Cheryl). Looks absolutely divine!

Would love to give this a go but would be omitting the Hagas side of it. That's one Scottish food that I've never been a fan of since even childhood when my best friend's mom used to make it once in a blue moon. 😂

Looks great, chicken veg bacon haggis and mash, what’s not to like there. I make a similair recipe at home using juts chicken in a creamy sauce with some veg, but I’m defiantly doing this one. Love haggis.

You could try suet pastry as that would be lovely and soft😁😁
