Hi a Valencian here!! Spreading paella knowledge. Yes, that was the tradicional og paella which only has meat and veggies. Then there are other seafood paellas, which are also as important and more ordered by tourists. Then there is the mix one (seafood and meat) which is an insult to the gastronomy of Valencia, like putting shitty chorizo in it [gastroterrorism]. There are also many different types of rice dishes, like arros al forn, etc.
- The tradicional one has chicken, rabbit, garrofó (big bean), bajoqueta (type of green bean), rosmary, safran and tomato. Optional are artichoke and snales, etc.
- The burnt rice is called socarrat and is supposed to be like that.
- That paella was small for two people or the amount of rice was for 2 people. Usually 50g or 75g per person.
- Paella is a family dish usually made on sundays at lunch. People own different paella pans with different sizes (up to 10 people) and have paella cookers (like a brick bbq): they can be fired with orange tree wood or a gas cooker made only for your paella pan. It's a whole thing in our culture.
- It takes about 1 hour to 2 hours to cook and usually if you go to a valencian restaurant you have to call in advanced an asked them to start cooking before everybody arrives. If you didn't preorder then you will have to wait about 40 minutes and ask for some entrées.
- Valencian usually eats directly from the pan and everybody has to respect their space (you have to imagen like pizza or cake slices) and go from the border to the centre. If there is someone from the family or the group of friends that can't eat from the paella due to the table, then that one is served in the plate and the rice is taken from the centre.
- The beautiful thing about this dish is that since it takes so long to cook the rice takes all the aromas from every ingridient creating a flavour very unique.

So that seemed really tasty and enjoyable. It sounds like the origins are from among the common people who put together some stuff laying around the kitchen and cooked it up for dinner. Interestingly enough some of the worlds most loved dishes were created that way. Here's an interesting genetic fact about the Spanish, they share a DNA marker found in large part in Ireland. No kidding, this genetic marker is known as the "Party gene" among DNA researchers. So look it up and you'll see the surprising genetic commonalities between those of Ireland and Spain.

As far as I understand there's also a 'country' paella, with rabbit, chicken and snails, etc...countryside stuff as opposed to seafood. It's also a Valencian thing, and might be the original one.
Scrape the rice off of the bottom and eat that... oh yes!!
Waiting for food for 40 minutes in a nice restaurant is not long. It's to be expected. That's why you have appetizers. Or do you expect it to be frozen and microwaved for you?
Decent rice takes 25-40 minutes to cook by itself.

Obviously Jim likes the Paella!! I had it in Mexico and it was pretty darn good! It had pork, chicken rice and chilis in it, just a little spicy but tasty!

I had Paella in Greenwich Village and it was much better looking than that one; had a lot more stuff in it! Tons of shrimp and all kinds of seafood. You’d think Spain would be “the” place for Paella. Fun to watch Jim eat it, though. 🙂

For the people missing the seafood. That would be the "paella mixta", if you want a regular paella, the traditional one, that one doesn't have seafood.

40 minutes? They rushed that Paella. It can take an hour or more in most really good ones. Great foods take a lot of time to prepare.

I love paella and have been making it for a few years now. There is a restaurant in my city (Columbus, OH) that makes amazing paellas and when I went to Spain a few years ago I expected it to be even better. Sadly it was not. Or not so sadly since I can go to the local restaurant (which is named Barcelona) any time I want, and I can't just up and go to Spain any day. I have yet to perfect the crust on the bottom of the pan - probably because I overload my paella with seafood - but it should be crusty but not actually stuck to the pan.
Yes!!! Concon is the best!!! You’re supposed to eat the concon in the paella. The flavor is all up in there.

I always try to crisp up the bottom of fried rice whenever I make it.
Everyone I know in Spain has a paella dish (several would me more accurate) . I've been abroad for 27years and I have two. It's the traditional Sunday dish. Don't forget to eat the "segarrat" (the stuck half burnt rice at the bottom) it's delicious.

I am from Texas but married someone from the Grao de Castellón which is between Barcelona and Valencia. If you come to visit us, I will invite you to eat my mother-in-law's paella which will make your hot pockets blow up. Your family is invited as well. But first ... we have to get rid of an unwelcome guest that has invaded the country.
To clean the pan....douse in Dawn dishwashing liquid, add boiling water and sit for 10 minutes.
Ohhh yeah.... Spain believes that everyone who visits their restaurants *obviously* are not hungry, and is *mainly concerned* with having long, lonnng, lonnnnnnnnng conversations with their mates. If the food takes 40 minutes to arrive, you must be surprised when it arrives, like "Already!? Feels like we just sat down!!" or perhaps, "Food? oh yes! I actually forgot that's what we came here for !!"

Saffron. Yes. It's the world's most expensive spice. Most kitchens that use it keep it in the safe. Harvested from the crocus flower. You could substitute tumeric. However, you'd only be simulating the color but not the taste.
Not to mention the "Amazing" long time to get your food.

Tip for those Romance language double 'L's. Don't say them, instead think of them as a pause button. Start saying the word, pause, finish saying the word.
Not in Spanish. Double LL has a very different pronunciation than two Ls with a pause, it's a completely different phoneme.
It takes a long time to get the saffron out of the safe.
You should do a cookbook, Jim. Call it "Dad is Fat: The Cookbook" and include how to nuke Hot Pockets. Or call it "Jim Eats the World: The Cookbook" and tell how you tried to replicate the dishes you've eaten all over the world. I make an American version of paella: chicken and rice with mushrooms, onions, chicken broth, chicken livers (for flavor, not for eating, unless one is so inclined). Add anything else you'd like.
You give it to those Brit Jim. Just wait, ten seconds, and they'll be jumping off the boat in Chesapeake bay and swimming ashore to suck up those righteous dollar bills. Speaking as a Canadian of course.

Paella is like bbq in the usa, it varies by region as well as preparation. i come from a cuban house hold in miami. i prefer seafood although that is shallow serving they could have use a smaller pan or even a deeper pan , im suprised it didnt end up crispy lol from what i see it did thats not normally what you go for. I prefer to use pearl rice for paella use a fish head and slow boil it and use the water to cook the rice and the rice to be a more wetter or soggy then add your seafood to your taste. that paella looks like a bad sex night or the walk of shame special, i wouldnt eat it. looks like they just threw in left overs. did you piss them off or something?

I had paella in Spain... It was good, but they leave the heads on the shrimp!!! A little disconcerting for me- I had never seen it before.
You should see how they eat crawfish down South. Not only do they cook them with the heads on, but they suck the juice out of the heads when they pull them off before eating the tails!

I'm from Spain and I'm not the biggest fan of paella (I like it, it just seems like everyone loves it more than i do) but I have to say that if it was underwhelming it may be due the restaurant. It's a lot more easy to find a place with terrible paella, or just "meh", that with good paella, specially if you're in some touristic place that may have a lot of tourist traps where the food is just so-so. That's why a lot of spanish people usually prefer the paella they make with the family that the ones from restaurants... if you're not a local and know the places it's like playing roulette.
So, you judged the national dish based on only one try?

Usually paella doesn't have snails. You can find some difference in the paella depending where in Spain you eat it.
