I braised my pork (only so I could complete errands and chores) I haven’t had good old fashioned boiled potatoes in a long time, I had to keep telling myself not to mix them with the butter and seasonings just let everything melt in; they were perfect! Being from south Louisiana, where most of our middle names are “ROUX” I just keep cooking the flour and oil, roux, until it gets as dark as I need. But I understand using Kitchen Bouquet because I think cooking the roux to the color you need may change the flavor. Whichever, it will be great. Gina Young style is hard to beat. My My that looks so good!

After frying my chops/steaks good and brown, I make me a gravy and simmer that meat on the stove or in the oven until meat is fall off the bone tender and the gravy has developed into a masterpiece for the mouth.
