1st Place People's Choice BBQ Chili Verde (Green Chili)
In summer 2021 we took part in the UK Chili Cook Off Association's National Championships and were able to pull off 1st place in people's choice with our take on a Chili Verde, BBQ'd of course but absolutely delicious.
Well here's what we did for you to try at home!

    Would the same apply where you have essentially ‘ruined’ the seasoning? I’ve got the new Karbon steel for the KJ and I think I’ve had it too hot, so now there are a few bubbles and quite a bit of baked on food from the last cook. I’m conscious that if I just light it up and go for cooking again, I’m just making the mess worse. Cheers

    You can't argue with success. I run my WSM a bit differently, top vent wide open and moderate all three bottom vents to achieve the desired temperature. Minion works OK for me, but those ribs looked delicious. It's the results that count. I wish I could get ribs that size.

    Thanks for this. Step by step and easy to follow. Only thing I haven't tried is beef ribs. Will try your method on my 18 WSM as soon as I can find beef plate ribs. Also impressed you use all the right temp equipment. Shows your not just some amateur. Cheers from Canada.

    Looks good for UK brisket to be fair! Do you normally use USDA/Aussie? I've Had some horrors from grass fed brisket before, but just ordered a point from Ollie.

      Yeah, we normally use Aussie, USDA or Canadian. But the dairy brisket was great and I’ve cooked them again since this and they also came out great.

    If you were to use this method using briquettes instead of lump, would they have to be stacked against each other properly .?

    May I add, never poke the brisket as the bark is the seal that keeps the moisture in. I’m not a fan of wrapping a brisket as you will loose some moisture also. FYI

      There’s no reason why you won’t be able to. We’ll be cooking both styles on the day in real time. But as a heads up, I’ll be expecting the hot & fast ribs to be fully cooked before we get around to wrapping the low & slow ribs 😂

    Once cooked and carved, how long can you you keep it for?

      If you're just keeping it in the fridge 3-4 days is the recommended safe time but you can also vac pack it and freeze it to store for longer. This generally is never a problem for us as we'll be quite happy to eat turkey for the next few days.

      That was quite a big turkey as we also had people to feed up the barn, but they had smaller ones. That 15kg turkey it was only £20 in the frozen section in Sainsburys. Although coming up with new leftover ideas is also part of the fun in cooking a big turkey.

      Me too, i find it helps get the flavour deep into the bird and doesn't take up extra room in the fridge that's already packed with all the other stuff for christmas and new years.

    Hello Mr. Ed! Great video and good instruction on your Jambo Pits Backyard Model smoker! With great help from a buddy we just towed one from Fort Worth to Alabama last week, and we will soon see how it performs. I am thinking good. Very very good.

    Provolone cheese is the gold standard. I haven;t found a UK source. Even Amamzon only lists Italy importers. English cheddar, though a thing of beauty, doesn't do the melting thing so well. I've been using Double Gloucestershire for my melting needs. Works great on Philly Cheesesteaks and nachos.

    How do you find the smoke flavor on that Jambo pit? I have the same smoker and i find that food is lacking of smoke flavor

      MarcelloDiCaprio I find the smoke flavour on my Jambo ok. I do run a super clean fire using just hickory logs so I don’t get massive smoke rings, but you can tell it’s there and it’s quite noticeable. If I wanted to change that I would probably try using larger splits as they would smoulder a bit more before lightning that would make it taste a lot smokier but wouldn’t be as clean burning. What logs are you using with yours?
