    You can't argue with success. I run my WSM a bit differently, top vent wide open and moderate all three bottom vents to achieve the desired temperature. Minion works OK for me, but those ribs looked delicious. It's the results that count. I wish I could get ribs that size.

    Thanks for this. Step by step and easy to follow. Only thing I haven't tried is beef ribs. Will try your method on my 18 WSM as soon as I can find beef plate ribs. Also impressed you use all the right temp equipment. Shows your not just some amateur. Cheers from Canada.

    Thanks forbthe video and I agree with you completely. I don't prefer the minion method at all. I uses 2x the charcoal I usually would. Have a great day, Cheers

    Great video, could you give any advice on using a bar be quick smoker in regards to maintaining temp for low and slow

      Not a BBQ I’ve used, but it looks very similar to Brinkman Smoke n Grill and there are loads of videos on RUclips showing mods that can be made to get them to cook better

      Bunch of Swines BBQ I’ve got some beef short ribs and pork ribs to start me off, if a top up is needed would you recommend using the chimney starter to light charcoal first or just put straight on?

    Brilliant video, just bought a WSM 22 in your video you mention the exhaust vent and front vent being slightly open but 2 side vents being closed. I'm a bit confused I can only see three vents on the bottom of my WSM 22 in a triangle please help! I'm hoping to your method a try
    By exhaust vent do you mean the top one?

      Aidan Clarke when put your wsm together, there will be one of those 3 bottom vents that will end up facing you and that’s what I call the front one.

      @@BunchofSwines brilliant thanks is the exhaust vent you refer to the one on the top? In the vid you get the fire to travel across to the other side in a straight line. sorry for sounding dense

      Aidan Clarke yes, it’s the vent in the lid that I refer to as the exhaust.

    If you were to use this method using briquettes instead of lump, would they have to be stacked against each other properly .?

      No!!!! Life is too short for that, just throw them in the same. I can’t see how it would make any difference apart from feeding someone’s OCD.
