    Absolute legends! Attended you BBQ school 2 years ago and have cooked them exactly like this ever since. Guaranteed results. My butcher got some rare breed grass fed white park in a few weeks ago. The marbling almost compared to USDA grain fed. Worth a try if you can get hold of it as I found then flavour superior to USDA

    what temp is the smoker at?
    what temp should the meat be when you wrapp?

      The smoker was running at 300f. I don't really use internal meat temp that much, but i would expect it to be around 165f before i wrapped these beef ribs.

    That is one big rack o ribs
