How long were they in the smoke for Ed? The Yoder seemed to be smoking at the point you wrapped them.
The Yoder smokes all the time, you don’t have to run them on a smoke setting, they’ll give you a good smoke flavour at the temp you’re cooking at.

The flat all trimmed up like that was around 3kg. This was a US grain fed brisket
is that a insulating blanket on the smoker?
Pretty much. The extra insulation helps me get longer burn times from a bag of pellets.
