Me too, i find it helps get the flavour deep into the bird and doesn't take up extra room in the fridge that's already packed with all the other stuff for christmas and new years.
If you're just keeping it in the fridge 3-4 days is the recommended safe time but you can also vac pack it and freeze it to store for longer. This generally is never a problem for us as we'll be quite happy to eat turkey for the next few days.
That was quite a big turkey as we also had people to feed up the barn, but they had smaller ones. That 15kg turkey it was only £20 in the frozen section in Sainsburys. Although coming up with new leftover ideas is also part of the fun in cooking a big turkey.
