I've used pre-shredded cheese since 2018, sometimes even a whole bag, for recipes, and I've never been knocked out of ketosis from the potato starch. I understand that some people prefer to avoid it, but my channel isn't all about strict rules. Sorry to hear that but I’ve warned people they flimsy for traditional tortillas. If you try to use them for regular tortillas, it won't work, but they work perfectly for my tortillas. Standard flour is difficult to compress, and even metal tortilla presses can break under the pressure. My tortillas are versatile-they can be used for chips, tortillas, hard shell tortillas, enchilada wraps, and whole-grain wraps. It's worth considering, but the choice is yours.

@@cheffatgrams I ended up buying one imported from Mexico (Oro Import) from Amazon. I didn't get it yet, but the only one that didn't have horrible reviews.(Electric Tortilla Press Maker Chapati Machine Flour Burrito Roti Press (8 IN). It was $100 ! We shall see if it works !

@cheffatgrams it's commercially sliced stuff we can't get (other than cheddar style sandwich cheese or, occasionally, havarti). I guess we're not a big enough market🫤. Also, no other country seems as enamoured with mozzarella as USA 😉

@cassieoz1702 You can also use 50/50 mix of crushed pork rinds and grated mozzarella. Form the mixture on parchment paper and microwave it. It will have a different texture, but it's still a better option than cheese-only keto taco shells.

@cheffatgrams Turns out they're the same thing by different names. CHOCZERO claims that it is a "prebiotic fiber" and not digested. So... 😒 hmm... if it's only sweetened with monkfruit, I am guessing that, depending on a person's actual spot along the health spectrum, the sweetness we register is enough to cause the pancreas to release insulin ALL BY ITSELF. Insulin is the hormone that stores fat and won't allow it to be burned as energy. So... there's THAT! 😏
