I bought 2 as on my very small SS retirement I really must save all I can. But in store buying my monthly supplies I do try not to take all of an item. I feel the pain of the shopper desperate for it, right after me, & I do my best to leave some. Thank You Chef for all Your hard work.

I use vital wheat gluten instead of egg white powder. I've mainly done breads and I like the texture. I haven't experimented further yet. I have a sneaking suspicion that someone we both know is going to launch a related product soon 😊 Hints were dropped last live 😀
when I can get some at a reasonable price, I will buy it. Last time I tried, it wasn't available in the country so I had to improvise. I've tried pea protein and protein shake powder with good results. :)
I can't accurately comment on it since I wasn't happy with the bread I got from it. Turns out it was the chicken flour that I didn't like... still figuring out how to do that in a way that I don't hate the taste.

I’ve just figured the reason to use powder over wet egg white is use in a recipe, does it need to be wet, or dry? In that case it’s not interchangeable .
It really depends on the recipe sometimes plain carton egg whites work. (my tortilla recipe does not work well with egg white powder) others times a combination leaded to success. With my breadstick recipe only ewp lead me to a truly successful outcome. It’s truly about experimenting because our ingredients are so much different than traditional cooking. I went and smelled mine and to be honest it almost smells like when I make my own chicken flour if you’ve seen that video. I use Now products not sure if Amazon Australia carries that one. Also consider watching Cook with Mel’s live tonight. You can ask questions and I’m almost always in the chat.

Are all egg white powders created equal or do I need to buy the one in your video?
I think they all act differently, but I’ve been so satisfied with now brand items. If they have it, that’s the brand I go with.
