How about a blend that would have Jermaine Stewart blushing?! What about a wine that make you second guess paying an arm and a leg for the finest vintage? Seriously...I have a friend trying to get theirs back! True story! Just kidding!

How To Make Mai Tai Mead (Inspired by the Tiki cocktail)
Heys guys welcome to the last edition of the series and what a better way to end it, than with arguably the most famous tiki cocktail drink of all time! The Mai Tai. This one is basically a traditional mead with flavor extracts added after fermentation. I'm just giving you another example of what you guys can do without adding fresh fruits or syrups. Sure the flavor profile may be different, but hey it's different. You don't always have to follow the same routine. Dare to be different and try new things! I mean you never know what new trend or classic you might start!

Here's a wine that will surely bring out the passion in you. It's a very beautiful semi-sweet wine that have a wonderful flavor. I wouldn't recommend you letting this one stay dry. @@dockofthebaycountrywines69 The repetition is not the issue, but coming to a program and waiting for the host to get to the point. I've been making homemade wine since 2017 and I know most of the people here as well. Take a page from their book and realize that wasting our time pushes everyone to move on and look elsewhere.
Welp I am here with a lot of persimmons planning some wine. I noticed most recipes called for acid blend which I don't have. I'm thinking the lemon will do the trick. I hope your wine turned out tasty.
@@vdoniel yes I use the lemon as a substitute, but any citrus fruit juice would work. Also, mine is aging. Thank you for sharing and watching!

@@MySuperman78 If it’s a citrus fruit it’s fine, but remember the lemon is not for flavor. It’s for acidity.

It appears that you only used the juice that was in the bag and not the fruit itself. If so, why not use the fruit pulp?

@@AttiCarius12 I would use 32 oz. to 64 oz. white grape juice to help bring out the melon flavor. Watermelon wine is a tricky one to pull off. Also, it came out pretty decent, you loose the color and like I said, very light flavor. Last, I would probably use Vintners Best brand watermelon concentrate. It’s artificial, but has that watermelon taste you’re looking for!

I work at a Kroger store and the produce peeps were about to toss 15-20 pounds of cotton candy grapes 🍇 in the trash because they were turning brown and a lil bit squishy. I came in like, “NOOOOOOOOO! Don’t throw😂 those away, Mark them down and I will buy them.” So they did and I bought all of them. About 15-20 pounds 🎉🎉🎉🎉 for😂 $ 10! That’s right $ 10 for all those grapes. They’ve been sitting in my freezer for almost a year. I’m watching your video because, it is time bro, it is time. hope yours was delicious I will be sure to come back and let you know how mine turns out when I use your recipe let

Have yet to make a mulberry mead (morat) but mulberry wine is delightful. If you want, you can add chocolate to the morat (or wine) by adding 4 oz of a malted barley called chocolate malt. it's a dark roasted barley that has been so roasted that there is no longer any sugars in the barley but the flavor screams chocolate in ways that cocoa nibs don't. And mulberry and chocolate is a marriage made in heaven... What you might do, is simply boil the malted barley for an hour, in a pint or so of water, strain the liquor, and when cool add the liquid to your morat just before bottling. If you were planning to flavor the mulberry wine with chocolate, I would simply boil the malted barley with the water you intended to add to the berries and again, strain that liquid before brewing the berries.

I have found freezing the fruit, for a few days...put in mesh bag in fermentor, then put it in the fermenter. I use a pototoe masher to break up the friut. The fruit breaks down better without compromising the taste.. heating/cooking the fruit... One other thing, my fruit ratio is 3lbs of fruit for 1 gallon of wine...
Sorry, I caused you pain with the heat method. I do my fermentations in many ways. I do them as you say and a few others. I appreciate your feedback, but I promise you, it didn’t hurt the flavor. Thanks for sharing and watching! Now, wipe away those tears, and let's keep brewing. 😉
I’ve not cooked the bananas before. Am def going to try your method next time. Even with straining bags, the lees are overwhelming with bananas. Also, everyone who makes wine NEEDS that pitcher! Makes life much easier!
That pitcher is a gem on so many levels. Definitely try this wine out, and don't be afraid to backsweeten with maple syrup or muscavado sugar! Experiment and see what you like. Thank you for watching, and you come back!
How do you know when fermentation is done?
Use the hydrometer to check after fermentation has died down. Get your gravity reading. Make sure to sanitize your equipment! I use star san. Also, make sure to record your reading. Make sure to reseal with airlock. Wait another week and take another reading. If it's the same, it's most likely done. If it dropped a few more points, well rinse and repeat until your readings are the same.

Sometimes, I do my adjustments before bottling, and you don't always need yeast nutrients. Muscadine are wild grapes. They have their own acid, tannin, nutrients, and yeast. You can use whatever, where you need it. Thanks for the comment, and thanks for watching!

👏🏾👏🏾👏🏾👏🏾 The "fruit" of the Elder tree, both the flower n berry, have been my nemesis 🤦🏾♀️. Knowing how to use both without a bitter outcome has been challenging. I think like you have done I will need to just make teas and not ferment on the actual flower or berry.
Using just the petals and a little as possible the little green branches they’re on should help with that. You can purchase dried petals or go the tedious route and remove them yourself. I think the fresh path is the way to go, because you have access to the fresh pollen and the aromatics are amazing! Last, but not least, there’s different paths to get to our destination. Pick one to travel and eventually you get there!
