How to make Lychee Wine

  • So here on the dock the witch doctor is always concocting something new! Well today we are at it again with this unique fruit. Lychee, also called litchi or lichi, evergreen tree of the soapberry family, grown for its edible fruit. Lychee is native to Southeast Asia and has been a favorite fruit of the Cantonese since ancient times. So, with a history like that it must be good! Come join me on the dock as we brew this kick BLEEP! fruit!
    Notes: If you do find the fresh fruits, you can use 3-5 lbs. of the fruit. Make sure to remove the skins and de-seed (remove the seeds). Make sure they are fresh and don’t have a light alcohol aroma. This is an indication of over ripening!
    You can use quarter lemon wedge (roughly 1/2 oz. lemon juice) or half a lemon (roughly 1 oz. lemon juice) depending on the size of lemon 🍋
    You can substitute with 1 1/2 lbs. to 2 1/2 lbs. of preferably a light honey 🍯. (e.g. Clover, Wildflower, Orange Blossom, etc.)
    You want even more of a twist? Add some spices such as 1 cinnamon stick, 1 or 2 cloves, and 3 slightly crushed cardamom pods. Make sure to check daily or at least every 3 days. These spices impart a lot of flavor and you don’t want your Lychee to get lost in the mix!
    Last, but not least, you can switch out the tea for 1/2 tsp. Tannin Powder.

      Sorry, it's not made yet, but I post updates on my Instagram. I can say it's clear and ready to bottle. I'm currently working on update videos, I'm just really busy!
