    I don't drink alcohol but my wife does drink on occasion. Being a rancher I like to have skills in as many topics as I can before I get too old. My wife loves my homemade alcohol products, especially my honey mead made from my own beehives so naturally, I oblige her wants and needs in every way I can. Happy wife, happy life.     This is my third year of making fruit wine following your videos. I started with Persimmon in 2022, and added pear in 2023 (both from our trees). This year I added Huckleberry (from a friend in Idaho). When you said, "It will be the best wine you ever tasted.", I was very skeptical. However, you were right. Last night my wife and I enjoyed a bottle of pear wine with dinner, and I have to admit, this is some of the best wine I have ever had. I make the wine to give to friends, family, neighbors, and coworkers. Everybody loves the wine. Thanks for producing these videos that have made the process so easy and successful. I really can't thank you enough.

      @@ryantaylor2221 The hardest part is letting it have some time in the bottle. My persimmon that I bottled in early 2023 is spectacular now. My other recommendation is to keep your wine in a cool dark place the entire process.

      I made Moscato accidentally lol and it was the best wine I ever had.. only enough I didn't add any ingredients.. I was trying to make grape juice out of grapes and it ended up as a slushy of grape seeds and skin with grape lol but I forgot about it in the fridge for 1 year and then all the fibers fell to the bottom and the top was white like water and bubly and sweet.. was amazing

    Living in Maine, i picked alot of blueberries this Summer with my little helpers (grand daughters). Anyway, after rinsing them well, stems etc i froze them and this also breaks the cell walls for fermetning later. I also use a pound of raisins which i put in my blender with two cups of frozen grape juice to blend and chop well. I find this helps fermentation also and adds more brix content. Nice video! tom

    Started blueberry wine on feb. 28th following your method and I came back to say thaaaaaaaank youuuuuu 😇😇😇 very easy to follow. Thank you for replying about the smell and you were absolutely correct, the smell went away. It tastes absolutely amazing! Semi dry 15% . Pitching the yeast to my second batch of blueberry in a few minutes😃 thank you thank you!

      @@HowToDoneRight I would like to add on Feb 28th I started a strawberry batch as well. I didn’t follow your method for this batch😩. For the strawberry I didn’t use Camden tablets , yeast nutrients, acid blend or tannin. Instead I used lemon juice , black tea and EC-1118 yeast. I’m not liking the results of the strawberry batch lol. So I plan to do another strawberry wine but following your method lol simple easy to follow and great results! 👍🏽

      I am doing a video soon of all the wines i made in the past year. And i will give you a hint.... Strawberry ranks in the top 2. It is so great i had someone offer to buy every bottle and didn't matter the price. Not sure why you didn't like yours maybe it was the amount of strawberries and frozen strawberries works the best. Im sure your next batch will be better. Now i want to open a bottle. Lol👍👍😁😁

      Well this recipe will always turn out dry after fermentation and rackings... i always backsweeten and the strawberry is a must.. I'm not a fan of dry wines but the strawberry wine sweetens to perfection. It may be your new favorite.👍👍😁😁

I have a second five gallon batch of prune wine in it's first rack now, a one gallon batch of strawberry in it's first racking and I'm starting a small batch of mango tomorrow. Yes. I'm hooked, happy and proud.

      I'm curious, by "prune" are you referring to the small plums that are called Italian prunes or to the dried plum product called prunes?
      I have a batch of wine made from Italian Prunes from my neighbor's tree. I call it plum wine to lessen confusion. It is delicious.

      @@medmark77 The fruit is a prune. Italian plums is a term made up for prunes by marketers because the dried ones have a stigma making them less appealing. They are the same, smaller, purple skinned fruit from, I believe, the plum family.

    I followed your recipe and instructions using Hachiya persimmons from my tree for Christmas gifts. After 20 years of letting the deer and birds eat the fruit I learned that Persimmon wine is common in Korea I decided to give it a try. I had doubts the entire time while making it, but it turned out great. People were skeptical when I mentioned 'persimmon wine' but were asking for more after tasting it. I'm making a double batch for 2023. Thanks for the great videos!

    Bentonite is added to clarify the wine and also to HEAT stabilize the wine,prevents it from becoming cloudy,reacts with the protein in the wine ,also much easier to filter later .

    Trap a zip tie under the two you've used to tie off the neck of your bag. Use this one to create a loop, through which you pass a broom handle, and suspend your bag hands free as you syphon the liquid. I use the same method as you do, since 1983. Great vid, thank you.

    Recommendation is get 4-6 clothing pins and use those to clip around the bucket to hold cloth around the edges :) Great Video!

    Hi. I do my best to follow your wine part one. Last year, I made a batch, and in the beginning, it was slow starting, so after a couple of days, I added more yeast. Ha, it then blowed up like crazy. I sent you a message and you said it would be fine. And it was, bottled it in August this year.

    Update on Wines
    In my previous post, I stated that I was a little worried because the air locks started bubbling furiously in the carboys after I raked it from the buckets. This was supposed to be going from primary to secondary fermentation stage. You told me that I may have racked it a little too soon and that it would probably finish up in the car boy. You also told me instead of racking it at 30 days to wait at least 45 days which I did. The airlocks had finally slowed. Today was the 45th day and I racked both the muscadine and concord wines. I tasted it and you were right… It is very dry at this point. I think I will be OKAY! Thanks for your help. I will keep you posted.😊

    I live in a flyover area of Northern Appalachia... We make some world class wine here but it's never as complicated as your process is. The fruits we use come directly from the farm fields

    Interesting video, thank you. Honestly the only reason I never tried doing this is because I thought in some way that it would be expensive to get into and the quality wouldn't make it worth it, but I'm finding more and more experienced people sharing instructions and tips that have made me decide to give it a go.

      If a batch goes bad, dont put yourself. I have done several batchs. Some where aweful but go me drunk and others were great than even my friends told me my cider was better than store bought

      Mine turned out great@@jess500texas . Now that’s I’ve had it bottled for a few weeks it just seems like it gets better and better. Have a bunch away to some friends for tasting but I’ve got about 7 bottles left. Kind of want to let them set for even longer and see what happens flavor wise.

      @@DanielPRails the trick is brewing more than you can drink!!! Keep it up, with a new “project” every week. Try to forget about the earlier stuff. Eventually you will have a couple month (and more) aged beauties. Although even my fresh stuff is better than the cheap £6 24h garage wines.

    I remember my first batch some ten or eleven years ago, Muscadine. When I put the ingredients in I thought OMG I've ruined it! It looked like MUD! lol But,, the longer it went on the better it looked and by the end it was absolutely gorgeous! Your video is one of the BEST I've seen in years. ( and I've watched many). I totally agree with you making home made FRESH berry wine is the BEST. I've made all the ones you showed and more lol. If you're near the South, you must try Muscadine!

      @@HowToDoneRight My blackberry/elderberry blend turned out fairly well. I must admit that I liked the back sweetened much better than the dry. I drank it all gone. And, I have "purchased" wine again. Harvesting blackberries from my own home grown as I write. Have you ever made Apple wine? I have a green apple tree in my yard that I would like to do something with.

    This video is super educational and has helped be learn most of the basic steps to doing this. One question as I'm currently living in Mexico for the year, certain equipment is harder to come by. So for the first phase during the fermentation process, instead of a 6 gallon bucket we have a 1 gallon bucket along with a 5 gallon bucket to equal up to a six gallon bucket. Just to have an idea, I broke down the measurements based on "per gallon". If you'd spot check me, that would be amazing! I got into this hobby because my uncle inspired me.
    For fermentation process in bucket:
    About 3lbs of fruit per gallon
    Add 1 Campden tablet per gallon using the spoon to smash and break up the tablets. (6 total)
    Add ½ teaspoon of acid blend per gallon. (3 total)
    Add ⅔ teaspoons of the yeast nutrient per gallon. (4 total)
    Add ¼ teaspoons of Tannin per gallon. (1.5 total)
    Add ½ teaspoons of Pectic Enzyme per gallon. (3 total)

      Yes this is correct from the video.. but if you really want to make it simple as you will see in my newer videos you can just at 1/2 tsp of all the additives per gallon of wine. 👍👍

    I made homemade wine before I just wanted to get back into it which is why I popped into this playlist. Excellent process and great recipe; the only caveat I have is the sugar you are using. I typically prefer to use raw sugar as processed sugar is stripped and bleached of all nutrients and natural flavors; that you just can't get outside of raw sugar or pure sugar cane. Other than using processed sugar; excellent info.

    Great video! I started with some small batches of fruit wine just to see if i could do it. This is exactly the type of wine I was looking to make in a large batch. I followed your instructions exactly (aside from starting my yeast in a warm water instead of a direct pitch) I have vigorous fermentation less than 24 hours later.😄 can't wait til it's done.

    The yeast actually needs oxygen at the very beginning. You should whip that thing into a frenzy. It will take less time to finish the primary fermentation that way too.

    Good video. My ex father in-law makes wine, it's the best I've ever had. He didn't use tannin though. I'm going to make a fruit & cannabis wine soon so I needed a recap lol. I've watched him several times but never done it myself. That was about 15years ago. I have 90 to 95% of the equipment already. I just need fruit & a chemical or two & the siphon hose & a bag. I can tell whoever is watching this, just follow the steps & you will definitely have great wine & please don't rush it. Good wine takes time. Thank you for the video sir!

    Hi! Thank you so much for this video I just have 2 questions regarding the process.
    1. When adding the sugar water with the different additions, can that be stirred in before adding the fruit since it’s in the mesh?
    2. I’ve learned that with certain fruits it taste better after 1-2 years. Would you rack throughout that time frame or is that time inclusive of when you bottle?

      Thanks for commenting and subscribing and great questions. And yes that is a great idea you can add the water before the fruit just make sure it is cooled to room temperature.
      Yes the 1 to 2 years is after bottling... but I like the fruit wines 3 to 6 months after bottling just my preference. 👍👍😁😁🍷🍷

    I just watched a video where a man broke open a 1862 wine, that had notes of peach, roasted nuts, apricots and other ingredients. He said it was the smoothest, most flavorful wine he'd ever tasted. Interesting. He said fermenting in wooden barrels gave the wine more flavor and longevity.

    Pretty much good information that a new home winemaker would need to know.
    Just a few comments:
    Don't rinse off the sanitizer. It potentially introduces bacteria to your brews. Water pipes are not clean, even if it's a well. StarSan sanitizes using phosphoric acid, which at recommended dilution levels are strong enough to kill bacteria and unwanted wild yeast. When further diluted with your must will actually feed and help build your new yeast colony.
    Would you please review how to read a hydrometer? Hydrometers measure the density of water. The percentage is potential alcohol and should only be used on the first reading to get an approximation. Really it should not be used. Use the specific gravity (SpG) and do the math. There are more complicated equations, but here is an easy one that will get the percentage accuracy within a 1/4 percent; if you want the other one, I can post it. Take a starting gravity (SG) and a final gravity (FG), then calculate:
    (SG-FG) x 131.25 = percentage alcohol
    My comment seems critical, but you make good videos and have a lot of good information presented in an easy-to-digest manner. I also watched all available parts of this wine process.

      Thanks for that. It drives me crazy when time after time after time I see people who claim to know what they're doing sanitizing everything - and then they rinse it off with tap water. It pretty much defeats the entire purpose.
      Not to mention the fact that depending on how aggressive your local water treatment plant is, that tap water may be full of chlorine/chloramine that's going to make your wine taste like, well, bleach anyway. I lived in one city that used so much chlorine the water was undrinkable; even ice cubes made with it tasted weird. Our laundry got nice and clean, though.

      Campden tablets sanitize fruit and juices which is a must. Starsan is for equipment.

    Hi! This is such a great video. My fiancé and I just started our first batch and the fermentation went smoothly. We just transferred to the carboy but our wine did not fill up to the top where yours was. What should we do to fill up so oxygen doesn’t ruin the wine or can we just leave it? Thank you!

If not it is ok to add water as long as not a significant amount. If you used my recipe it accounts for that because of extra fruit. Adding a quart or 2 iis totally fine in 5 gallon batch.     Ive been making wine for years and never knew about the need for chemicals. Ive always had very high alcohol content but always had that homemade wine taste (SRTONG flavor). Currently Following this recipe to the T with some home grown yellow plums. 24 hours in after yeast. Hope this makes a smoother wine. Great video

    I made some cherry wine last year,from my own northstar cherries ,I followed a farmer on youtube,it required bringing them up to a boil,adding sugar and yeast,but it didn't mention getting rid of old yeast,so after it sit ,and was safe to bottle it,I did,but not until I shook it up,mixed in waste,well as you probably know ,it tasted bad,I haven't drank anything for 12years,but having been in Germany for 1 1/2 yrs in Army,I know what good wine tastes like,I was going to dump it all out,but decided I'd try sweetening it,I don't like dry wine,,Oh my,,its really good wine,I racked it and bottled it,and everyone loves it,,I learnt how to sweeten it from your vids,I am drinking a bit of it,, its best wine I've ever had,so far,lookin forward to tasting the wine I made from your recipes.

I had no idea that I would be interested in making wine until I ran across your videos. I also read many of the comments and commend you on your professionalism and humility.

I do have a question it seems this entire process from start to finish was about 6 months. After bottling how long would you allow it to sit.       Thank you so much for your kind words. You made my day. I would say the whole process is about 4 to 5 months based on racking 3 times which Is 30 days between each racking. I find that sweetening your wine which Is coming soon brings out the fruit flavor and then aging. I will wait about 3 to 4 months to drink it. The longer it ages the better.... but when you Make homemade wine, you will not go back to buying wine it is that good. It's funny i thought i would try making wine same as you, but now i love the challenge of making it better and better and trying new things. ♥️♥️😁😁👍👍🍷🍷

    Years ago I learned from a hillbilly wine recipe using my blueberries. It always seemed to be 100 proof. So I would add z little more sugar and sometimes juice and put it through another fermentation cycle. It came out milder. Then I received a wine making book with recipes and tried the Blueberry Bordeaux recipe, making a few tweaks, and was very satisfied. I'm thinking of doing some wine making again and glad I came across your video.

    Love the video and I'm looking forward to starting my first batch soon! I'm completely new and in my research phase some claimed that when making wine from berries you should add more sugar like you do in this video, but when making it with other fruit the extra sugar is unneeded. Do you use this exact recipe with additional sugar no matter what fruit you use, or just when you use berries? Thank you and look forward to more videos!

      I use this exact recipe for all juicy fruit.. berries pineapples bananas... a harder fruit like apple cranberry pears I will add more fruit but would not have too. Great question

    Update on my wine making project:
    My wines have been in the carboys for almost a week now after the primary fermentation. So far the taste is great. Is it normal for the airlock bubbler to start bubbling again after being racked in the carboys? I have concord and scuppernong. The concord has really become more active in the last day or so. The scuppernong airlock is not as active as the concord is though.

      Yes it will still ferment.. you may have racked too soon but that's no big deal will finish in secondary. 👍👍

    Excellent advice. What if you have a large quantity of fruit? Is it preferable to work in glass 5 gallon containers or can 30 gallon plastic barrels also be used?
    So, how about racking? Because the barrel is dark, you can't see sediments and wine purity. There is probably also a problem with air control.

      Dag that is some serious wine 30 gallon and it is great you have so much free fruit. I would think you could do it but when racking just stay far away from bottom. I've never done a batch that large so can't give you alot of advice on how to do that but sure it could be done. Obviously commercial wine makers are doing large batches like that.       If you are talking about adding fruit and extra juice yes you will have too much sugar and wind up with a super sweet wine because your yeast will die off once alcohol content Is too high leaving excess sugar. The best thing would be to take a reading with hydrometer before adding sugar water and see what potential alcohol is going to be. Then add sugar mixture slowly if hydrometer reading is low. But alot of people sweeten there wine this way upfront instead of how i do it at the end where you have more control. Your hydrometer will be your best friend to get it right upfront.     I have always followed this same recipe except I don’t heat my sugar l dissolve it in the bucket along with my chemicals then add my mesh bag of fruit l also always use bottled spring water never tap !!! Great video anyone can follow you and make the excellent nectar 🔥

      Black cherries, mashed and juiced, added to sugar, next make a tea bag of guayusa tea and steep it in hot water, add this hot water to your fermentor, add a few cups of sugar. Top off with passionfruit juice and chestnuts. Add yeast and begin fermentation. Thank me later.

    great video. I am having a problem with my wine not fermenting. I have followed your instructions as well as I could. I started this on 1/29/22. I am making 3 gallons of a mix of strawberry, blueberry, blackberry, and raspberry. I used frozen fruit and added the camden tabs, acid blend, yeast nutrient, tannin and pectic enzyme. 24 hours later I sprinkled the yeast over the top. My starting SG was 1.100. I used Lavlin 71B. The temp is around 64 degrees. I stirred everyday and I am not seeing any bubbling action. Today(2/3/22) I checked my SG and it is at .92. Should I take out the fruit bag? Try to restart, or is this not worth trying to finish? Any help would be greatly appreciated.

      When you were stirring after added yeast, was it foamy... it looks like fermentation is complete since SG is way down. You may have same problem i had some times the bubbler does not bubble. Could be small leak in bucket. It happened to me on small batches for some reason. Never used that yeast before... and if you taste it you also would taste alcohol and dry wine like.

      If those specific gravity readings are correct according to abv calculator alcohol is 23 percent... usually a yeast will not tolerate that high... it sounds to me like you have a very strong wine. If you taste it it should taste strong...

    Leaving out proofing the yeast is also suggested in artisan bread making. The logic is that if the yeast if fresh and therefore viable, proofing wll activate the yeast outside of the dough (mash for wine making) and you loose some, if not a lot of it's potential.

    Starsan is a no rinse sanitizer. Been using it for 15 years without rinsing. It will not cause any off flavors if used at the recommended rate.

      @Aaron Ellis I have been brewing and making wine since the 80's, These days it's so much better than it was at the beginning. Hell, we had to use Bleach back then. Now with brew in the bag and no chill methods, even all grain brewing is a snap.

      I too recognized a potential issue rinsing the starsan from the bag with tap water. I love starsan and starsan residue is safe but the bag sops it up like a sponge which I wouldn't want that much starsan in my product. His addition of campden tablets saves the day in his instance. Plus the fruit has plenty of its own yeasts and bacteria that are kept in check with the campden tabs. I don't suggest skipping sanitization but I believe you could since the campden is used. Rinsing the bag or letting it hang till its not holding so much sanitizer or not sanitizing the bag at all could be ok here. And I only say that because of the use of campden tabs.

      Starsan is completely safe in diluted form... and is especially needed in a bag that may be used several times. Rinsing defeats the purpose of sanitizer.

    Great video. I enjoyed watching your methods. I did get a bit lost about how much water to add to the sugar as you were melting it down. So how much water to add exactly? You mentioned a "sugar water" over "simple syrup" which is usually a 2 to 1 ratio. I'd like to know how much water to add for your method. Thanks.

      Sorry for the confusion. For this part of the recipe you just need to dissolve all the sugar that's called for in the recipe in water. I use a 12 qt stock pot. This should not fill bucket when adding the sugar water. You will then add tap water to get to desired level in your bucket.. i think i mentioned in video i use 6 gallon bucket because once take out pulp will be left with about 5 gallon of liquid which is perfect for 5 gallon carboy.

    Tip, if you have ever gotten fruit flies trapped in the airlock, don't use water but use a little vodka or moonshine if you have it around.. I"ve learned some things from your video also. Knowledge is huge in wine making, beer making and distilling. Since the internet i went from flying by the seat of my pant to becoming much more scientific in my approach. there were a few books around and alot of bad advice lol. Now, it's amazing how much is at hand to help anyone get started or continiue to make quality adult beverages. Cheers! tom in cornish maine. :)

    I was using the Primitive method of making wine. I don't have any of this fancy equipment that is being shown in this video, just glass jars with fruit fermenting and try quick rising yeast packets from the baking aisle. Although it seems I am missing some key basic equipment here, like a siphon, which I was mistaken on what it was, until I saw the long tube. And as a filter, I'm just using a glass drip coffee maker. As a basic as you can probably get. Hopefully it will turn out half decent.

    If you put a flat piece of wood across the top of your bucket you can tie the bag so that it drains naturally without having to hold it, keeping hands free……..bril vid

    Actually, I freeze all my fresh picked fruits for at least 48 hours. It makes the cell walls break down easier.

    Good video friend. I have been making my own wine for about 4 years now. I originally did it like you, put my fruit in the bag to ferment but that was a huge pain. Now I just put my fruit and water in and wait till it is done fermenting THEN I put my brewers bag over a new bucket and pour all the contents through that bag. It catches all your solids and makes the stirring etc so much easier.

      @@HowToDoneRight Only time it has ever happened in 25-30 batches I have made. Was the first time I have ever made peach so I am not sure if that had anything to do with it or not. I still have almost 1.5 bushels of peaches and plan to start another batch here in a few days. I stopped using the carboys as they are just such a pain to clean out. I have 4 6 gallon buckets and 1 7 gallon that I use now.
      Blackberry/Strawberry is by far our favorite to drink but our Strawberry/Muscadine is a close second. We have 4 mature muscadine vines we can pick 250-300 lbs per year, we get our strawberries local, no sprays or chemicals on them. Freezing fresh fruit is always recommended as it bursts the sugars in the juice making it much easier to extract.

      That's a great idea on the buckets. Do you think the additional headspace with oxygen is an issue?? Your almost like considered a commercial wine maker😂😂 Probably of all the wines I've made so far Strawberry is my favorite. Blueberry close second. But let me tell you this pineapple wine is by far the most fragrant wine i ever made. I'll be racking next week and getting that video out but i can't wait to try that.     I got into wine making several years ago. Basically bought all the stuff and ruined a couple batches because I got really busy after I started it, racked it 1 time, and never bottled it. I did make 1 successful batch back then that was really good. It was grapefruit wine. I hate grapefruit, but this was surprisingly good. A friend gave me two 5 gallon buckets of grapefruit and told me to try making it even though I don’t like the fruit. I pitched my yeast basically how you did in the video but it didn’t work. I contacted a local brew shop and they told me I should have covered it lightly for 24 hours with a towel or cheese cloth. The 2nd time I pitch my yeast it started working. Fast forward to a couple weeks ago and I decided I wanted to try making wine again. I really like your videos and followed your instructions with strawberries. Put everything in except the yeast, covered like you did for 24 hours, and again my yeast never took off. Any thoughts on why my yeast isn’t taking the 1st time? I just pitched it again, but I want to try to figure out what I am doing wrong so I can fix the problem. Should I leave it lightly covered for 24 hours before putting my yeast in?

      That is strange. I never had yeast not work. Are you using the campden tablets to kill natural yeast and adding yeast nutrient then waiting 24 hours to add wine yeast on top. I would strongly suggest trying the red star wine yeast links in the description. I keep in fridge for up to a year and works everytime. I always keep bucket covered with air lock never leave uncovered... another thing are you sure its not working. My airlock never bubbles in my 1 gallon batches but foams and i take readings and i know it's working.

      @@HowToDoneRight yes I did but I didn’t use Red Star. I am using Lalvin 71B. It is supposed to be good for Fruit Wine. I will try Red Star next time.

      Just weird. Some yeast strands are more picky than others. That red star i have listed in the description of my wine videos is amazing. It has never failed me. Good luck and keep me posted. Im curious now 😁

      @@HowToDoneRight I just checked it, which is about 24 hours after the 2nd pitch and it is slowly bubbling. It will obviously get more vigorous over the next couple days. I just wish I knew why it didn’t work the 1st time. I will definitely use Red Star next time.

      Well that's good news. Another thought is some yeast prefer a strict temperature range. It's not too hot or cold where fermenting is it. The red star has a very broad range. It's usually 70 degree range where i do it. Just a thought.

      Dandelion wine was on my list this year but probably not going to get to it. Too many batches going. Lol. Use 1 gallon of dandelions only the yellow per gallon of wine.. I would also add some fresh lemon juice 2 lemons per gallon to enhance the flavor. It will add additional flavor otherwise you most likely will not like just dandelions. Keep me posted👍👍

    Wow, what a great presentation. It’s amazing how simple that process of making wine can be. I know you can probably use other varieties of fruit like mangoes or watermelon or pineapple. I imagine the amount of fruit is the same measure and the process is the same for the other fruits. Your instructions were absolutely perfect and clear and precise..     My mom loves to can. So I bring her my grapes and she cans them for me and all she can want too. I make wine straight from the quarts as I need them through the fall and winter and spring. It always turns out as good as the fresh mashed summer grapes.
