I noticed your comment about the cork being slightly raised (proud)above the bottle. I avoid this by cutting a sliver of cork about the same width. Load the sliver into the bottler between the cork and piston and the cork will sit flush in the bottle.

On a bored summer Sunday evening in 2020 during confinement I was curious to make sundried tomatoes, loved your originality and your character which made me want to watch more videos, I saw the cider and the wine videos and started little by little, and today in 2024 marks my 4th year of winemaking and I started from 20L of wine to 120L of cabernet sauvignon grapes this year, your videos were very influential and they always kept my family entertained. Fabulous lesson in wine making. Thank you. Have only ever made wine from grapes, once - Sangiovese and that experience was very similar to yours. The one difference was that I crushed the grapes using the bottom of a crate and that meant that none of the stems went into the crush. But I do have a question. It did not look like you sanitized the spoon with which you stirred the must (the juice and fruit) or the containers into which you racked (siphoned) the wine. Would that not cause any problems with the wine?

Over here, in the US, standard practice in brewing beer and in wine making is to sanitize all equipment using Star San or K-Meta (Potassium Metabisulfite) to kill all bacteria and mold. When we add laboratory cultured yeast we would add the K-Meta to the grapes 24 hours before we pitched the yeast. If we were using the yeast on the grapes, as you did, we would not add the K-Meta to the grapes.
My uncle used to make homemade red wine and sometimes he would give me a gallon of vinegar which I love and now he doesn’t make it anymore. Can you one day make a video on how to make red wine vinegar, I tried and never worked out from old left over wine I waited months and it never turns, I watched a lot of videos no help. Thank you 🙏

I have a question..my cousin and I were hunting in the mountains and came across an old abandoned cabin ..no one had lived there for over 10 years ..we searched it and in the basement we found a large bottle like you see at 25:12 but it was a green bottle .. it had wine in it ..we tasted (to anyone reading dont ever do this btw we were very young and we knew the old man that used to live there made alot of wine) and it was really sweet and had not alcohol taste..why would that happen?..did we just find an aged grape juice? or sweet vinegar or something? it tasted like a very sweet moscato just no alcohol. :(

Thanks for advice on the used fermented grapes. I once dried and ground them and used the powder for muffins and pancakes but it added no flavor. I might be traveling to Southern Italy for work; is there a way to purchase primitivo grapes? I can purchase small quantities of wine grapes, like 10kilos, in Macedonia but not sure if it's possible in Italy.
Any advice on how you clean and sterilized your containers and Demijohn's? My son planted grape vines last year, maybe not this year (only 15ish pounds of grapes) but, next year we may have enough to fill one Demijohn.

How do you battle acidity? My vine tastes sour after primary fermantation. Probably around 2.5 ph maybe less Also you haven't added any additives, right?

I boil the cork a little bit approximately a few seconds , and this way the corking process is easy and the cork stays straight with a top of bottle
