Simple Eggplant Parmesan

- Ingredients:
3 Eggplants 1/8 of inch sliced
10 oz mozzarella sliced and cubed
Parmigiano Reggiano sprinkle each layer to your liking
Tomato sauce to cover each layer of eggplants
Salt, black pepper to your liking
Olive oil for brushing

Note: add parmigiano top layer before baking.

Perfect way to avoid so much oil and fillers. If you're missing the bread crumbs, it is easy to sprinkle some on at the end and brown them. They soak up the grease from the cheese, so be careful not to burn, but this flavor is the finishing touch. Thank you for the inspiration. Beautiful video and happy you shared with all of us. ;)

My friend had gone to Italy, she claims this the authenic way of preparing eggplant Parmesan. No bread crumbs and eggs, she had made it for me....AND wow!!

Karina my parents are from frosinone Lazio centre south Italy and they use bread crumbs and eggs. So I guess it depends on what region you come from. But either way is great.
My mother was from Palermo, Sicily and she used eggs and bread crumbs and I know she was very AUTHENTIC! Fred

I never could figure out how to keep my eggplant from getting soggy. Plus, eggplant is notorious for soaking up all that oil I've been frying it in. Now I know the secret: no breading; no frying. Thanks, Pina, salud!

I made and eggplant delicious. I baked the eggplant slices & I added zucchini slices & brushed all with olive oil & baked & continued layers as per your video. It turned out delicious.

I made this version last summer . It was really good and so much simpler to made than breading , and frying . Really good !!! This is how Ill make this from now on . I also cut it into serving portions and froze them . After they were just frozen. I used my food saver and packaged them. Ive been enjoying this since last summer !

Normally I would never eat eggplant but I adore eggplant Parmesan. I like it better than chicken or veal Parmesan. I can’t wait to try this!

I am wondering in this dish, if you use a prepared tomato sauce that is to say, a flavored one? Or, just a plain tomato sauce that you'd have to add stuff to, salt, etc. ??
I just today am making this and in reviewing your step by step instruction solved the sauce dilemma (by your own admission of that sauce recipe being in another video) After I just added on my own some Italian spices to a basic tomato sauce. Just a tick too late to get your recipe, but now I know anyway!!!

I made these in stacks of two, about 1/2" thick. . Perfect for sandwiches. You can really taste the eggplant flavor without breading. 💜

Without breading and frying the eggplant, it's almost like an Italian version of Greek (veggie) moussaka. Two of my favorites in one! Can't wait to try it. Thanks for the recipe!

Very much in the way I have had it in Italy. Now remember with dishes like this there are variations and you will find it breaded in places in Italy also. But to me this is the most flavorful and delicious to highlight the main star - the eggplant. And easier too.
