- This Italian Breaded Baked Eggplant Recipe is fast, easy and delicious, but what I appreciate most is how many ways I can use these baked eggplant slices. Of course the best way is to make eggplant parmesan, however, there is also the eggplant roasted pepper hero and just a simple spaghetti topped with the Italian Breaded Baked Eggplant and some tomato sauce. How about as a pizza toping or some sauteed spinach sandwiched between 2 slices of eggplant. The possibilities are endless!

Love love love this. Cut out fried foods this was delicious!!! Still crunchy I feel like it was even better without all that excess oil ! This will definitely be a staple in my kitchen from now on !

Years ago I had Sophia Loren's recipe for frying eggplant, it was published in a magazine. Chef Dan, your recipe is very similar to hers, She peeled the eggplant, cut it thicker, used seasoned breadcrumbs, etc. the only real difference (that I remember) is you baked this instead of frying. I'm making this your way today. Baking is healthier. than frying...and easier.
It’s not always healthier, some of us need fat in our diet to be healthy but I did this recipe in my air-fryer without knowing it was a recipe, I just tried it and it’s bloody delicious 😍

Dan - I just came upon your video and had two eggplants I didn’t want to go to waste. Tried out your method and it worked PERFECT. The only thing I did different was cooking them on parchment. This is a real keeper, thank you!
👍Glad it helped, I am always buying eggplants on sale, and so I usually have a couple in the back of my fridge. I use this recipe and cook them up, then they are so versatile. Sometimes i will just use them in a sandwich with some roasted peppers and hummus, awesome. Sometimes a quick, easy eggplant parm. As a snack, I roll then up and make a tomato sauce dip. I made it using ground flax seeds with water to make and egg consistency and included all the other ingredients in the batter and it worked just fine. I have also used the same batter recipe for peeled pumpkin and it was delicious as well. I agree with the previous comment...it IS a "taste bomb,"
👍Thanks for the comment. Most of my videos are either vegan or can be made vegan very easily. I love the use of flax seed eggs as a substitute for eggs in this recipe. I also use the eggplant as a substitute for luncheon meat like turkey or roast beef in sandwich.😁

I made some breaded eggplant today, I grew up with it and we're Guatemala 🇬🇹, for some reason we make this way too. I used the crumbs mixed with chilly powder and parm. Came out really good.
OOOh! I like the chili powder. I think I will do some experimenting with adding some different flavors to my eggplant. Maybe Chinese 5-spice would be nice. Thanks for the comment.👍👍

Fried baked eggplant oh so good. Chef Dan, my mouth is watering. That garlic is key to baked eggplant. Take a nice crusty piece of bread with your baked eggplant with some pesto and wow!! Makes a tremendous sandwich. Add a slice of prosciutto di parma if you wish and enjoy! Make sure the bread is semolina bread!

I always use 4C breadcrumbs for my eggplant.
Can't wait to try this recipe. The only thing I would do differently is use the parmesan cheese and peel the eggplant with stripes to keep some of the color.

Omgosh this was sooo good! I used gluten free 4c bread crumbs. I peeled the skin versus last time trying this recipe. Using almond flour, Wow wow wee wow! It tasted close to breaded chicken! 30min each side on 400F in the oven. You are damn right, sir!
😁The best part is that it is sooo versatile. My favorite is making a hero with the eggplant, roasted peppers and fresh basil. Yum!👍

You can sub the eggs with about a cup of chickpea flour to 1/4 cup of nutritional with salt and a squirt of mustard. Add water and stir to make a batter like consistency, it’s really good instead of the egg,

👍👍Thanks for the comment. You will sacrifice some browning by using parchment paper, which will slightly affect the flavor. You can try it and decide if the easier cleanup is worth it. Sometimes an easy cleanup makes all the difference.😉😉
UPDATE. . . . my wife just picked up some vegan alfredo sauce, so I popped some eggplant in the oven, and I am going to make eggplant parmesan, only using that vegan alfredo sauce.

Yes, absolutely. Nutritional yeast is the vegan version of parmesan cheese.

😁That's really a personal preference. I don't salt the eggplant. And, I don't see a huge difference. I love eggplant, so I really don't want to mess around with it's character. Try both ways and decide for yourself. Thanks for the comment. 👍

😃 First, Thanks for the comment. Sometimes I will use water. This makes the bred coating a lot thinner, which makes the eggplant less carbs and less fat, and vegan. The trade-off is the eggplant won't have that crunch from the breadcrumbs, or as much of that toasted breadcrumb flavor. Depends on how I intend to use the eggplant. If I am putting the eggplant on a sandwich, then I will use water because I will get the "Breadcrumb" character in the bread of the sandwich. 😁

I made this again and I love it but mine just don't brown, even at this temperature, so I took it out and fried them in a pan. Why are mine just not turning brown in the oven? What am I doing wrong?
Salt the sliced pieces both sides it, let it set about 15 minutes. Rinse them and dry them off with a paper towel. Eggplants have a lot of water, the salt draws out the water.

😁Most of my videos come with an ingredient list below the video. Some videos, like the breaded eggplant one is all about technique, so there is no written recipe. The idea is to use the eggplant in your own recipe. There is a recipe coming out in September, Eggplant cannelloni, which used the baked eggplant in an interesting way. Otherwise, use this eggplant in any way you would use a cooked eggplant.

Yes! Eggplant seems to absorb great flavors and so it makes great dishes, definitely worth licking off your fingers😁
Perfect recipe except one thing....To get the best flavor, salt the eggplant slices first and squeeze the bitter juice after 30 minutes...And then dry grill both sides of each slice with no oil or anything before crumbing. The eggplant is then fully cooked before crumbing. Try this and you will always do it this way.
😁😁I like the idea of salting and grilling the eggplant. That would bring more flavor to the dish. It's a lot more work, and I don't know if it's worth it. Also by cooking the eggplant twice, it may dry out a bit. Maybe salting and grilling the eggplant should replace the breading and baking altogether . That would lower the carbs also. @@chefdanalmostvegan Thank you. If you dry grill the eggplant it will be 1000% better. Trust me. Keep the breading method but not with the raw eggplant. Just try it. Grill it with no oil or any other ingredients after you have salted it and the bitter juice is expelled. Just try it once. It is like eating crumbed veal.
Just tried grilling before breading. It does adds another layer of flavor. I love that charred flavor from the grill. It required more work on my part. A lot of extra steps. I believe, for a special occasion . . . . . Yes! this eggplant was delicious.

Making tonight, I always take the skin off & salt first & let it sit on paper towels. Why add water to eggs?
The protein in the eggs are water soluble, so the eggs, with the added water will thin out, holding less breadcrumbs, resulting in more eggplant flavor and less bready texture.

Close that oven door, Dan, when you take something out. Heat rises and you lose a lot when the oven door is open.
You are 100% correct! Sometimes in filming a video, things like that happen. I try to be mindful about stuff like that, but occasional something will slip through. Sorry about that and thanks for the comment.

Misleading "almost vegan", what does that mean: Vegan is binary it is vegan or not, there is nothing called "almost vegan". The moment egg is added, it is NOT vegan, as simple as that,
100% true. These recipes are NOT vegan. The introduction of small amounts of dairy and even meat make this diet Not Vegan, and very sustainable, and even healthy.
