Thanks for the oven fried method. I’m making eggplant parm, stuffed with spinach, mozzarella and meatloaf mix blended into my garden to table marinara sauce. I soak my eggplant in ice cold salted water for 15 minutes then they dry on a dish towel. Same outcome with the bitterness. 🙏
The reason for washing it after salting it is to draw out the bitter juices.Pat it dry and then cook it. If you don’t like the sting on your tongue, peel it first. It comes out with a nice mild flavor when cooked!

This was a great recipe - easy to follow and came out crispy just like she said. I tried the "one hand for wet, one for dry" but it's still a bit messy LOL! Thanks for the fun video and delicious recipe!
Thanks so much! And it's REALLY hard to remember to keep one hand dry and one wet. As long as the end result is delicious and you have access to a faucet to wash up, it's all good. 😎
Hi Nedine! You don't completely wash them. I pat them really well with a paper towel or clean tea towel to remove the moisture from the top and bottom of the eggplant slices. This also removes some of the excess salt.

Lol! Yes, I'm a very messy with breading. You can also just try to remember one hand for wet stuff and one for dry. I can never remember though!
