Love your accent. It brings back memories of my childhood. I was raised by my grandmother who was from sicily and always spoke a mixture of italian and english. Guess I'll always have a place in my heart for italian women.

I was in Italy several years ago and had amazing eggplant "meatballs." I have been trying to recreate the recipe since then. Finally made this recipe and they are better than what I had in Italy! Made them for a dinner party and people were asking for the recipe. You are a boss!

I just happened to see "Eggplant Meatball Recipe" in my RUclips travels...sounded good since I love eggplant...and now I'm laughing throughout this video at how this chef (and he is indeed a chef!) explains things to us. Clear, entertaining, and with a heavy but still understandable accent...for the most part. Lol. I feel like I'm sitting in his kitchen while he tells me what to do!! LOVE IT! And this recipe is so simple yet looks absolutely delicious!!! Yup...definitely subscribed!!

I made this meatless meatballs today and I want you to know that it is absolutely delicious !!! I only had grated parmesan cheese on hand but I may even omit it next time, it was very tasty even b4 adding the cheese to it. A definite keeper !!! Thank you for posting it!

I made these tonight. They turned out well. I think that I will sub provalone for the mozzarella next time and add some strongly flavored mushrooms. They benefit by dipping in tomato sauce. Yummy and easier than they look.

He’s living proof that the Italians are the masters of cuisine and that no one knows food better than them, no one and as I’ve told my Italian friends, “You’ve had the privilege of growing up eating like KINGS & QUEENS!!!” And that my friends isn’t an exaggeration, it’s the TRUTH!
