Even if I'm making a completely different dish, I put Pasquale on just to hear him talk, he makes me smile so much. A gift from a loving God indeed.

Yes indeed! The old folks were funny as HELL! They'd have us kids rolling with laughter and didn't have a clue why we were laughing...which only made us laugh even harder! LOL!! I miss the old folks so bad...

This recipe is the BEST Eggplant Parmigiana I've ever tasted. So easy to make and it's even easier to eat. Add some Italian red wine and some garlic bread and you will be in food heaven (until the pan is empty). Thank you Mr. Orsara. Salute! Che tu possa campare cent’anni.
True wisdom of the ages - everything this guy makes is worthy to be made in any kitchen. Everyone should know just how good his food tastes. Everything I’ve ever tried to make of his recipes _always_ pans out so well! Thank God he made an eggplant parmigiana because I have eggplant in the fridge and I wasn’t sure of what to do with it until now! 😜

Hi I have a question.. When you tried this recipe did you salt your eggplant first? I noticed that he didn't. Does this not effect the cooking process?

Trying this right this moment! I got hand picked eggplant from local farm and so far the frying part smelled very delicious 🤤 and after allowing it to rest on the paper towel I got a little taste of just simple fried and seasoned bread crum coated eggplant and it was delicious! Can’t wait to try the final product! Still got 14 minutes on the oven but so excited for my family to try this!

Couldn’t find pecorino cheese in my area so I used Romano instead. Still came out very flavorful and filling. I would definitely recommend this to others!

I love this guy!!! I plan on making this tomorrow night. I have never had eggplant before. I grew it successfully in my garden this summer. Now I will make it to try. I'm excited. If I don't like it, at least I have a bottle of wine to wash it down. But better to make it authentic.

Looks like what my Momma used to make. She taught my wife to make it and it has been a family favorite since the 70s...well even befor that. Mom was making it back when I could barely remember in the 50s. Love the Eggaplant Parmigiana!
