I've been following this recipe since you posted it. I think I've made it at least 5 times. Today I made it using gluten free bread crumbs and almond flour since I had to change my diet due to health issues. It still turned out wonderful. I absolutely love your recipes and channel! Salute! Cin Cin!
I tried it with rice flour and it came out good too! With the gluten free bread crumbs too, rice flour is also cheaper then almond flour if you’re looking for something more affordable:) my mom and brother have celiac disease so its nice they can still enjoy these delicious recipes 😊

that's actually dangerous for the home cook slice a little piece off like he did to make a flat then turn the flat side down on the counter for your cutting board now you're eggplant won't slip then make horizontal slices the same way as he did much easier trust me try it
@@johnkovalicky3389you’re speaking in terms of ease but if you have good cutting technique doing it his way is just as good and makes the layers much easier to stay together and not fall apart after cutting. To each their own though!
Pasquale, my grandmother on my maternal side was from Santa Maria Vicco in Caserta. My mother learned all of her cooking from her. Growing up we never had this dish with mozzarella. I really believe it's an American dish with that. I still love it the old way with Parmesan. We peel and salt our eggplant before frying but utilize the same methods otherwise Thank you for posting and all of your recipes. Saluta chin chin!

Congratu;ations on you wine I bet it is the best of the best, I come from an Italian family, & my grandfather use to make his own wine also, my grandoarents came from Sicily, came to this country & my Grandfather opened up his own shoe store, & my Grandmother use to make slip cover for the stars in her home one of her customers were Perry Como the famous singer. My grandmother was an excellent cook everything fresh had her own garden grew her own tomatoes & jared them as yoiu do. My grandmother also taugtht me how to make my first pizza pe, I will never fiorget it & I miss them so & the good old days when weatching you it brings back all the memories of the good old days ewhen things were fresh & home grown & life was good, GOD BLESS LOVE WATCHING YOU

With men in the house, Everytime I fry up Eggplant to make eggplant parmigiano it never makes it to the end! They come into the kitchen they eat the fried eggplant while my back is turned. 😍

I am Armenian, whenever we use eggplant first we put them in salt water for half hour, then squeeze the salt water out then start preparing them. Salt takes the bitterness away. It's interesting that you don't do it like that.

What is a good red sauce from the store ?
I like Mutti's passata. It is just pureed tomatoes, nothing added so you have full controls of adding the garlic/onion and herbs for flavor, depending on the dish you are making.

There’s no reason to get water out of the eggplant?
I’d recommend salting the eggplant, i tried it without and it’s not too bad but the salt would probably make it taste better

thank you for the recipe. I make it every Friday now. Everyone loves it. Sometimes I put a couple of mushrooms inside. I changed it up a little bit. Sometimes I cook the eggplant in bacon grease. Then it has a lot of flavour. Goose fat is even better.
I still say he never swallows that wine , it’s just showing off . Where I come from , you put a glass up and knock it down .
