I love, love, love this recipe!! I bake them as you do. I garden so I always have a lot of eggplant to use. Last summer, I made this recipe to freeze and use in the winter. It worked well! I also received an air fryer for Christmas. Turns out the eggplant meatballs were made for the air fryer. I pop them directly from the freezer to air fryer. I get a bit of crispy outside and they hold up better in my marinara sauce.
I know, I was just thinking how envious I am of her tan. I am so pale and my skin looks like an old leather boot if I try to tan. But Laura looks gorgeous.

in eastern europe we salt the eggplant like 4 hours before using it and let it rest, it removes the bitterness and you can keep the seeds without having to throw out like half of the vegetable.

I do eggplant balls too Laura,my mixture contains; Eggplant ( baked then peel) Egg Caramelized diced onion ( i caramelized bcoz it gives another level of flavor😉) Minced chicken breast ( marinated) Salt + pepper Chickpeas flour ( thats another flavor) A bit of flour And breadcrumbs to roll after molding it to a ball. What do u think? No sauce though.I make thousand salad dressing for my dipping sauce. But i like your way too.I’ll try that one of these days😉😉
Jahjazzz I dont include the peel ,since it is baked.I scrapped the eggplant meat and chopped to mix with seasoned chicken minced meat.Believe me,i was surprised how the result came out.☺️Though of course you can include the peel. Note: Remember to coat the balls onto breadcrumbs before frying.

ciao Laura I cook my eggplants in the oven when I do meatballs . Another virsion we do here in Sicily is eggplant and fresh tuna, you have to try them ,they come out so good . saluti della Sicilia

Very delicious but there is no need to peel the eggplant, add water, bake , fry freeze, or to mash them.. ( unless you want to.) Just cut the eggplants add the oil and cover til soft. Therre will be not moisture, and air fry them if your stove has that setting. Thank, you Laura. Once again your recipe came through👍❤️
I remember my mom making a simular version of this but also mixing in ground pork and making little patties frying them up then in the oven with the tomato sauce and cheeses
Mrs. Laura, great recipe & i've never seen these. Folks, if you don't have a garden & grow eggplant, try to buy sicilian eggplant , they are a little smaller, but have the least amount of seeds & bitterness, less than italian or from california

Oh my. I've never heard of this way of serving eggplant! It sounds delicious and it's another great way of adding a meat free meal to the weekly menu.

You can also (carefully) flip them mid way through the baking process and they’ll get crispy-ish on both sides.
