My Nona, like you, was from Napoli and breaded. My other Nona was from Calabria and she breaded, as did my Mom and all my aunts. When you say "real Italians" that takes in a lot of territory. Some real Italians, in some dishes (horrors!) leave garlic in, especially in a 6 hour Sunday Sauce. I like to infuse so the garlic doesn't burn, but that's just me. Love your show, it's just that a lot of folk these days say stuff about "real Italians" when "my Nona " or "real Italian family" would be more true. We love you and watch all the time! Yes! That is how my grandmother and mother made eggplant! Never salted and drained, just cut, floured and yes egg and cheese (our family always use Romano) and then fried. Delicious!

This turned out really good. I would recommend adding spices made my marinara sauce soooo yummy. I added dried Italian seasoning onion powder smoked paprika extra dried basil.

🍆 parm is my favorite Italian dish. The olive garden version is good but you haven't lived till you tried it the right way. Bucco de pepo makes a good authentic one like Laura.

We bake our at the end no matter. Baking it makes the eggplant even more tender and gives it a lasagna-like texture. Both ways, still amazing though.
