Thank you for making this video. I made this cake for my husband's birthday this week. Thanks to you, it turned out AMAZING. He asked for "interruptions" so I added toasted walnuts to the batter, along with some soaked and drained golden raisins and currants. I also added a tsp of lemon juice to the cream cheese frosting along with one of vanilla and vanilla bean scrapings. It was so rich and moist it made us need a moment with our food. With raisins it feels like people either love em or hate em; very few who say, "doesn't matter". Personally I don't like them in any baked goods and would never just eat some raisins but I always liked Raisin Bran cereal. Go figure

I have so far tried this recipe and the raspberry muffin recipe from your channel. My muffins turned denser and dry after keeping sealed in fridge. So, I didn't try them again. But, your carrot cake is really heavenly! It is amazing, moist and delicious! My husband prefers his cream cheese buttercream that way too. He says the lemon juice helps cut the sweetness. I am fine with super sweet buttercream though. 🤣

So my sister and I were making this when we realized that the written recipe completely contradicts with the video. The video uses more spices, sour cream and an extra egg that was never mentioned in the written one. The order also slightly differs between the two. When looking at the written recipe earlier, we didn’t buy sour cream because it wasn’t listed and got slightly confused. We substituted a couple of things and followed the video. Our cake still turned out delicious, but a clarification would be much appreciated. Thank you.

The recipe in the video and the recipe on your website are very different! I followed the recipe on the website, and I am very disappointed. It calls for a cup of brown sugar on top of the already 1 2/3 cup of white sugar. That isn't in the video. Even the grams are wrong on the brown sugar. I googled what 1 cup of brown sugar wieghs in grams, and it says 200, not 335. I tasted my batter before baking, and it's like syrup.😥 There is also no sour cream listed as an ingredient in the website recipe! I will have toss this cake and start over. Waist of time and ingredients. Please, PLEASE be more careful and fix those mistakes so this doesn't happen to someone else!!

I’m in the U.K. and made the recipe from his website. OMG the conversions are WAY OFF! It has way too much sugar in it. Please take note if you are using the metric measurements and do your own conversions.

I too found this recipe amazing. I had 6 people over last night and everyone raved at the results. Followed the written recipe except I added 1/4 cup of rum soaked raisins. Frosting doesn’t say which butter to use. I used unsalted. When I make it again I’ll add 1/4 tsp of salt.

I also grew up with carrot cake that had shredded pineapple baked inside it , but then as I got older I noticed that it was only my family that ate carrot cake that had pineapple, I still love carrot cake with pineapple , and we also don’t make round cakes when we make carrot cake , we make a 2 layer sheet-cake , the sheet cake feeds more People 🥕 🧁 🍍
I always add pineapple and raisins to my carrot cake, which is a very similar recipe to yours, but I like the idea of the apple sauce instead of the pineapple, so am definitely going to try yours. I also love the way you decorated it, it is so cute!
Love the pineapple added. That's how I thought it should always be but then also coconut and some raisins also. Always thought a 1/2 c shredded zucchinni would be so good also. Then it would be so nutritious too and super sugary and then the cream cheese frosting makings it fantastic for the perfect cake - best of all worlds.
Your childhood version is the way I make it. My recipe from The Texas Hill Country cookbook is a "14 Carat Cake", calling for pineapple, nuts and raisins. I used gold raisins and it was the BEST selling dessert at my restaurant. :)
I grew up in rural central Virginia, and we added pineapple and some people also added raisins, and one baker added rum soaked raisins. During the pandemic, I watched a British competition between professional bakeries, divided by location. The small bakery run by a sister and brother ended up beating all the rest, with their carrot cake, to which they added 1/3rd sweet potato and 2/,3rds carrot. Omg ! I made it at home, adding pineapple and toasted walnuts, no raisins. Drunk or otherwise. It was absolutely delicious, so then I experimented using parsnips and fresh coconut. Which I shredded in food processor and put the coconut in a dish towel to squeeze out excess water, which I then used the coconut milk in a tres Leche cake which I added the other half of fresh coconut meat. Honestly, they were absolutely delicious cakes. My friend was too chicken to try to make pastry cream, so I told her to get a tub of vanilla pudding and canned coconut milk and package of flaked. With a white box cake mix. She told me that night her husband took out the trash without being asked !!!! I love your channel, because you take the mystery out of baking and cooking, with clear steps and instructions. Except ... sometimes I think it's a bit mean to enjoy your taste tests so much ;). Those Korean butter cream flowers....most are made with bean paste! I’ve never tried it, but I can’t imagine that they’d taste as good as they look! 😳😳😳
Oh Cliff actually, red bean paste (which is probably what your referring too) is actually very sweet and tasty and part of many korean desserts. It would still taste good lol
@@teacuups7094 Actually, I was referring to white bean paste. You can use white kidney beans or great white northern beans. I know red beans are used in baked sweets though, but I've never tried either.

I made this, and it was the best cake I’ve ever had in my entire life! I just substituted applesauce for orange marmalade, and added 1/4 of mayo to make it super moist. 10000/10! Thank you so much! Making it again for my birthday tomorrow!
Thank you for making this video. I made this cake for my husband's birthday this week. Thanks to you, it turned out AMAZING. He asked for "interruptions" so I added toasted walnuts to the batter, along with some soaked and drained golden raisins and currants. I also added a tsp of lemon juice to the cream cheese frosting along with one of vanilla and vanilla bean scrapings. It was so rich and moist it made us need a moment with our food.
It was the second time in my life I'd ever made a real cake. Thank you again!!💕

In the Netherlands we cook with Celsius and you would always recommend by 5 degrees, so we'd never bake at 177 degrees. It would either be 175 or 180.

I make my carrot cake with pineapple, nuts, and coconut. I call it a "tropical" carrot cake. I love to try it different ways too.
I have so far tried this recipe and the raspberry muffin recipe from your channel. My muffins turned denser and dry after keeping sealed in fridge. So, I didn't try them again. But, your carrot cake is really heavenly! It is amazing, moist and delicious! Anyone that has tried my carrot cake (cooked according to your recipe with less sugar in the cake) has loved it asking me to make it again. If it was easy to make, I would make it every week until I get tired of eating cake!

Roommate adds a touch of fresh lemon juice to the Cream Cheese frosting. Gives it a little Zing without making it lemony.
My husband prefers his cream cheese buttercream that way too. He says the lemon juice helps cut the sweetness. I am fine with super sweet buttercream though. 🤣

I made this for my MIL for her birthday and she (and everyone) loved it. Very great recipe. I ended up doing a two layered cake though, and froze the third layer. Have me some extra breathing room on the cream cheese frosting (which was great). Thanks John for the great recipe!

I made this cake but shaped it like a gnome for my sisters birthday last month... I omitted the cinnamon bc shes allergic.... Its a delicious cake... Of all the birthday cakes I have made more of this cake got eaten then all the others and it was the biggest cake I've made for her... Everyone agrees it pairs well with tea or coffee... I have never enjoyed carrot cake until I made this for my husband’s birthday day. It was delicious. Thank you. By the way, cardamum is expensive 😩 but it made all the difference.
So my sister and I were making this when we realized that the written recipe completely contradicts with the video. The video uses more spices, sour cream and an extra egg that was never mentioned in the written one. The order also slightly differs between the two. When looking at the written recipe earlier, we didn’t buy sour cream because it wasn’t listed and got slightly confused. We substituted a couple of things and followed the video. Our cake still turned out delicious, but a clarification would be much appreciated. Thank you.

I made this cake for my birthday and it was amazing. Absolutely will only be using this recipe going forward! I've never weighed my ingredients before, but I found that it was much more accurate than what it would've been if I had just measured the way I normally do. Highly recommend this recipe!!

The recipe in the video and the recipe on your website are very different! I followed the recipe on the website, and I am very disappointed. It calls for a cup of brown sugar on top of the already 1 2/3 cup of white sugar. That isn't in the video. Even the grams are wrong on the brown sugar. I googled what 1 cup of brown sugar wieghs in grams, and it says 200, not 335. I tasted my batter before baking, and it's like syrup.😥 There is also no sour cream listed as an ingredient in the website recipe! I will have toss this cake and start over. Waist of time and ingredients. Please, PLEASE be more careful and fix those mistakes so this doesn't happen to someone else!!

I too found this recipe amazing. I had 6 people over last night and everyone raved at the results. Followed the written recipe except I added 1/4 cup of rum soaked raisins. Frosting doesn’t say which butter to use. I used unsalted. When I make it again I’ll add 1/4 tsp of salt.

I also grew up with carrot cake that had shredded pineapple baked inside it , but then as I got older I noticed that it was only my family that ate carrot cake that had pineapple, I still love carrot cake with pineapple , and we also don’t make round cakes when we make carrot cake , we make a 2 layer sheet-cake , the sheet cake feeds more People 🥕 🧁 🍍
I always add pineapple and raisins to my carrot cake, which is a very similar recipe to yours, but I like the idea of the apple sauce instead of the pineapple, so am definitely going to try yours. I also love the way you decorated it, it is so cute!

Love the pineapple added. That's how I thought it should always be but then also coconut and some raisins also. Always thought a 1/2 c shredded zucchinni would be so good also. Then it would be so nutritious too and super sugary and then the cream cheese frosting makings it fantastic for the perfect cake - best of all worlds.
Your childhood version is the way I make it. My recipe from The Texas Hill Country cookbook is a "14 Carat Cake", calling for pineapple, nuts and raisins. I used gold raisins and it was the BEST selling dessert at my restaurant. :)

I buy my golden raisins at Aldi and use them mainly for bran muffins and curried chicken salad.
I grew up in rural central Virginia, and we added pineapple and some people also added raisins, and one baker added rum soaked raisins. During the pandemic, I watched a British competition between professional bakeries, divided by location. The small bakery run by a sister and brother ended up beating all the rest, with their carrot cake, to which they added 1/3rd sweet potato and 2/,3rds carrot. Omg ! I made it at home, adding pineapple and toasted walnuts, no raisins. Drunk or otherwise. It was absolutely delicious, so then I experimented using parsnips and fresh coconut. Which I shredded in food processor and put the coconut in a dish towel to squeeze out excess water, which I then used the coconut milk in a tres Leche cake which I added the other half of fresh coconut meat. Honestly, they were absolutely delicious cakes. My friend was too chicken to try to make pastry cream, so I told her to get a tub of vanilla pudding and canned coconut milk and package of flaked. With a white box cake mix. She told me that night her husband took out the trash without being asked !!!! I love your channel, because you take the mystery out of baking and cooking, with clear steps and instructions. Except ... sometimes I think it's a bit mean to enjoy your taste tests so much ;). Oh Cliff actually, red bean paste (which is probably what your referring too) is actually very sweet and tasty and part of many korean desserts. It would still taste good lol
@@teacuups7094 Actually, I was referring to white bean paste. You can use white kidney beans or great white northern beans. I know red beans are used in baked sweets though, but I've never tried either.
This cake was amazing. I made it less sweet by only using half of the sugar in the frosting with a simpler decoration and it was delightful.
That does look amazing and I'm sure it's absolutely delicious. However, I have a 1986 Blue Ribbon recipe that does involve pineapple and it is equally delicious, I'm sure. Thanks for sharing. xo
