I pair it with brown butter cream cheese frosting. Make some changes, I use 100g of almond instead of 70g of walnut (don't have it on hand) going to use it after this. Everybody love it 😍 And cooking the carrots beforehand is a genius move. It enhance the carrots texture and taste. Thanks Bruno for the brilliant recipe. Comments I got : 1. I made only the cake part of this recipe to test it out and wow it was really good, compared to Inspiredtaste's recipe. I also added orange zest and ground cardemom to the batter(perhaps that did the trick). Excellent flavour & texture!

Agar and other seaweed derivatives work well as stabilizers that replace eggs/gelatin. That being said, your cake is going to be denser, so I would suggest softer flour.
