Just finished making it, I wish I could send you a picture lol. It was really easy to make and for the first time, I didn't mess up my cream cheese buttercream frosting. Whipping both seperately and a little bit together also ensures that you don't overbeat the cream cheese which tends to seperate (it always did for me). I decorated the center with a wreath of thyme, tiny mint leaves from my garden and caramelized walnuts. Thank you a lot !

Hi Chef! Thank you for sharing your version! I've made carrot cake just a day prior to your video and it came out done but not the usual spongy/doness cakes should have. Instead it was somewhat dense like a pancake but tasted baked. And i am not very sure why. But i have 2 questions i would like your thoughts on if you dont mind :) 1) why did you decide not to squeeze out the excess water in thr carrots? Won't the excess moisture be to much for the cake? 2) some tend to add milk into their recipe or at times buttermilk even. Besides adding flavour to the overall cake is there other reasons they add in milk and why did you decide to omit it from your recipe?
1. my carrot wasn't that wet and I think it adds a bit of moisture. don't think it's excessive. 2. yeah you can do that I guess - it'll make it more moist! think it's personal preference!

I changed this recipe just a little bit. I used melted butter instead of oil, I added chopped walnuts, ground cardamom, ground clove and cinnamon. I didn't have any ginger so I blitzed up 6 ginger biscuits and added to the mix. It was wonderful.

Finally a recipe with 120g of sugar compared to 1120g of it in all the other recipes I've seen ... I never used that much sugar but consistency was runny... I can't wait to try this and check the taste as well as consistency

Made this. Pretty tasty. Definitely needs more salt, and more icing sugar and lemon in the frosting. The flavour lands a little flat without these extras.

Finally a recipe with 120g of sugar compared to 1120g of it in all the other recipes I've seen ... I never used that much sugar but consistency was runny... I can't wait to try this and check the taste as well as consistency

Chef Cho, today I tried your carrot cake recipe and kids in house love the texture and the sweetness of this cake. Unfortunately I am in lockdown area so I couldn't have cream cheese on hand for the frosting. I will try the cream cheese frosting next time.

Made this. Pretty tasty. Definitely needs more salt, and more icing sugar and lemon in the frosting. The flavour lands a little flat without these extras.
