This rich and moist spice cake, full of grated carrot, toasted nuts, and crushed pineapple, has great flavor, especially when covered with a tangy sweet Cream Cheese Frosting. The interesting part is that while those pretty orange flecks of grated carrot give the Carrot Cake color, sweetness, and a moist texture, its flavor is almost indistinguishable.

    Hello Stephanie! I didn't realize until today - Thursday, March 14, 2024, when I wanted to double check the steps for making the icing (Today is the 1st time that I made it, but this might be the 3rd or 4th time that I've made the cake.) that I hadn't returned to leave a comment to tell you how much I love it and appreciate the teaching/share of it!
    The first time I made it, I didn't have 2 1/2 cups shredded carrots, maybe 1 to 1 1/2 cups but I did use the recommend apple sauce, as well as raisins. I substituted olive oil for vegetable oil as well, and it was delicious!
    The second time I made it, I used the 2 1/2 cups of shredded carrots, plus everything else from my first attempt. I couldn't believe how it went from delicious to amazingly delicious. The first bite made me holler, WOW!
    The last time I made it before today, I experimented by Julianing my carrots instead of shredding them, big mistake on my part. They didn't bake up at all well. In that cake I also tried using the crushed pineapple in lue of applesauce. It all got eat, but it wasn't complete happiness like the first two cakes were.
    Today, I remembered to shred my carrots again, I didn't add the applesauce or crushed pineapple, only the raisins but might have forgot to add the teaspoon of salt. But thankfully it's still good, if not as sweet. The marvelous thing about making the icing for the first time this time - is, it should hide the salt I forgot add, which brings out the sweetness!
    I thought sharing my experiences might help others to experiment and/or avoid my mistakes.

    Hi Stephanie, thanks so much for this recipe, I remember making this cake when I was in my 20’s and I’m 81 now. It’s absolutely delicious and I haven’t made it in years, so…thank you with all my heart♥️it reminds me of years gone by when things made sense and were more balanced. Your presentation was just wonderful, the entire video calmed me so and brought me joy.     Stephanie, I congratulate you.
    I have listened to thousands of recipe and methods over the years, for all sorts of recipes - but I must say yours is the best set of instructions, ingredient conversion weights, alternative decorating ways, alternative ingredient choices that I have ever heard. The information you give is so precise. It’s a “joy” to get a complete set of instructions that I can work with without having to google baking temperatures, weight conversions etc etc. Thank you

    I made this yesterday and it was delicious! We had it for our Christmas dessert today. I baked part of the batter in small, heart shaped pans with removable bottoms. Then I made them into two layer, individual cakes, with icing between the layers, and then covering the entire little cakes. Guests loved them. You are a very good teacher! Thank you for the video!

    I just made this. This is the best cream cheese frosting I've ever had. Most cream cheese frosting they're overly sweet but this one is just right.

    Today, i baked this cake one layer 9x13 inch with cream cheese frosting just as you did for our family gathering. Everybody loved it. It is so moist and tender. I used apple sauce instead of the crushed pineapple. It was really a fancy cake. Thank you so much. I baked many of your recipies and non of them failed.

    So this cake is extremely delicious... the texture with the pineapple omg. The icing was just sweet enough for my liking. I would definitely make this again.

    I saw this video, as I was thinking of what to bake to group friends when they come to visit me. It's my first time to bake carrot cake, and they all said this is the best carrot cake they have had eaten, so moist and so delicious. That pineapple crushed gave a great taste. Thank you Stephanie!

    This Carrot Cake recipe looks so delicious Stephanie. I've made this cake several times before. I like adding some shredded coconut into the batter. It definitely gives it an extra amount of flavor.

    I made this today, and this is the best carrot cake I've ever had! It's so wonderfully moist and delicious! And guys don't skip on the toasting the nuts part, it really does a make a huge difference! If there's a better carrot cake recipe out, then someone will have to personally make it for me and give it to me, cause I have no reason to go out of my way looking for any other carrot cake recipes after today. Thanks so much for this!

    My favorite part of all of your videos is that smile on your face when you take it out of the oven...like you've just done something naughty and know you got away with it! 🤗 That cake looks so good and the frosting? Omg, I want to lick the bowl! We just finished a banana bread so I am going to make this next. Carrot cake is one of my favorites and I haven't made one for far too long!

    I have tried a few recipes on the Internet and finally one that worked out really well. Love the way she explains each step and I really appreciate that she does the conversion to grams. Saves me from looking up on the net to convert. Great video. Thank you :).

    Carrot cake is one of my favorite desserts, and my all time favorite cake forever and ever! Everything about it is perfect and all flavors, texture, and everything about it is all in the center in the middle. Thank you for making this fun video, I like how you explained everything to make it, and that cake looks delicious. You're a great baker!

      Couldn’t wait until the morning to cut into the cake and have a slice. It came out deliciously flavorful and moist. The cream cheese frosting was great paired with the cake. I topped the middle of the cake with walnuts and drew on small carrots 🥕 around the top so each slice would have a🥕 on it. If only I could insert a picture.
      I was totally amazed at how well it turned out. Like always this recipe was a great 👍 hit.

    Made this cake for my 50th birthday, using a gluten free special blend flour, Frosted it with gold foil and walnuts. Turned out beautiful! Wish I could share photos!

    My sister and I made this today for Mother's Day (2021). It turned out awesome. I modified the frosting a little as I've got a cream cheese mouth. I am totally pleased and grateful for your recipe. Thank you so much for sharing! It's already tucked away in my favourite recipe book 😄. It will be THE carrot cake recipe for me.

    This is my go-to carrot cake recipe, made this quite a few times and everybody even people I do not know love it, birthdays, BBQs, just get together, parties, and I just as you do. I weigh by ingredients, I use quite a few of your cake recipes thank you so much.

    I made this cake today, tested it for Easter. Oh my, it was delicious. Changes l made was cut veg oil down to a 1/2 cup, added equal amounts of unsweetened applesauce, 1 teaspoon of vanilla & 1 cup of sugar. Beating eggs, sugar & vanilla is key to a tasty/light cake. Thank you for a wonderful recipe 😊

    Oh my goodness! I made this yesterday for dinner. Amazing! I have never had a carrot cake like this. My family were amazed. I agree with the toasting of the nuts first and the crushed pineapple - what an awesome cake. By far the best we’ve ever tasted. I’ll definitely be using this recipe going forward.     I would have thought you maybe would have been playing dolls in the mid 70's or baking with an easy bake oven. You don't look old enough to have been baking this recipe for folks in the mid 70's...but it's a great recipe...thank you..love me some carrot cake... ♡ 👍

    This is on the list of most wanted for birthdays, thank you for sharing! This cake never fails and if there are any pieces left, I freeze them for days when we need comfort cake. The only thing I do different is I bake it in a square tin, and cut little (3”) squares to serve.

    Dear Stephanie, today I made Carrot Cake once again. Always a winner & never fails me 👍👏. I used Apple Sauce instead of pineapple, was delicious all the same.
    I cheated with the frosting though 😊. Used instant Philadelphia Lemon Cream Cheese frosting from my local supermarket (was a great substitute, especially when pressed for time). You're extremely popular & well known down under (Australia).
