This version has lots of well toasted pecans and a brown butter cream cheese frosting that is not to be missed under any circumstances. Watch Claire as she demonstrates how to achieve even, light layers and then assemble them into a cake that’s equal parts, impressive, satisfying, and delicious. Happy New Year!! What are you baking for the last day of 2020?
i'm doing a zoom with a bunch of friends and we're all going to bake, i'm making homemade bounty bars! (coconut and dark chocolate :)
Hopefully something from your book ❤️😊
Just finished the Earl Grey and Apricot Hamantaschen and there are some things I’d do better on next time but they are SO good, thank you Claire!
No joke, we’re baking a carrot and pecan cake. This video was a sign!!!
Chocolate and banana brownies 😋
I've made this cake 4 times now since buying the book in October. It's literally the best cake I've ever eaten. I've never been a big frosting person but the browned butter frosting is AMAZING. could eat a tub of it by itself. BEST CAKE EVER
How sweet is it? I want a not too sweet cake so i can happily eat 1 or 2 servings.
@@ruvin7023 this is the cake for you then! Just the right sweetness level, I made it for a friend recently and she would typically eat a couple pieces with her morning coffee and said the pairing was perfect!
@@BarDownSnizzzzy19 Two pieces of cake for breakfast.....? :O
@@BarDownSnizzzzy19 perfect!
I'll try to make it when I'm not anymore drunk. Happy New year!
@@snoppgoran I guess no one is calorie counting in 2020 😂💗
Clair every time she opens the fridge: "Oh no"
Fridge tour please.
Yesss
I'm happy to see the Sriracha in her fridge. It's become a common condiment.
Her skin isn't wrinkly im insulted for her lol. She looks her age her hair just went gray early.
didn't she kinda do one in one of the videos she did while she still worked for BA? idk I just remember her touring her fridge at one point
@@gingertroy6329 I honestly love her grey hair! It looks good on her!
I feel like Claire's apartment is always insanely hot because her oven is perpetually pre-heating to 350
yess
😂
😂
She certainly has air conditioning as everyone in the United States of means has had since post World War II.
One thing I appreciate about Claire is that she has the energy and vibe of a yoga instructor, but for baking.
Your yoga instructor has chaos meltdowns of unsatisfied perfectionism? 😁 jk, she is wonderful, I totally get what you mean 🌸
It's wonderful to see Claire not having a purposely induced meltdown and just doing her own thing.
It’s really relaxing !!
Right? I never really understood the appeal of seeing Claire super stressed out every episode
I kinda miss Gourmet Makes, tho. I'd love to see her do it again. Maybe on her own channel, she can take her time and be less stressed, while still making more-delicious homemade snack foods.
Same. One of the reasons I started to dislike gourmet makes is because she didnt look happy doing it/was super stressed especially as time went by and essentially would skip episodes every now and then but these videos I love! Shouldve made her own channel long ago!
GM started good but in the end they purposely made Claire suffer for entertainment. Just look at how Dan (Director/producer) started to treat her, like throwing ingredients at Claire (wtf).
We need a fridge tour. We NEED it, Vinny
Yes, please !!
Yeah! It's past the point of wether we'd like a fridge tour, it has become a necessity now
And a homemade vanilla extract walkthrough!
@@erical2162 Put vanilla beans in jar. Top with vodka. Give it a shake every 1-2 days until it's brown. Ta da.
Yes!! FRIDGE TOUR!!!!!!!
Everyone: Raisin.
Claire: Sun-dried grape.
Grappe des rasins.
In the US the term raisin is a catch-all. Everywhere else we have sultanas, currants, raisins etc, and all refer to sun-dried grapes of differing sizes
sun-dried grape sounds more exotic :D
Where are the raisins!!
@@sandysmith7441 I'm from the UK and I didn’t even know that was the difference.
I want bloopers where the crew eats what she makes and obviously give her praise
Words can't describe how happy I am that she started her own channel
Your dog profile pic is so cute
My husband was in the other room while I was watching. I didn’t know he was listening, but he told me, “Claire really does have such calming energy. I can see why you like her” ☺️
The fact that she hates raisins in her baked goods let’s me know that she’s the TV chef for me 🙌🏾
Raisins always seem to have sand in them.
Hate the juicy plumpness of a baked raisin! 🤮
@@trenawarner4566 Oh yes, those Raisin Bran commercials where you get "two scoops" (scoops?) of "plump, juicy raisins". Neither one of those terms makes any sense in any known universe. Oh, we loves our wrinkled, dessicated, chewy dried fruit with some bits of sand in it!
@@ferociousgumby the sand in the dried fruits are probably seeds. who would dry fruit in sand?
@@ferociousgumby Sand. LoL It's natural sugar crystals and a good way to tell those raisins are getting a bit old.
Classic Cream Cheese Frosting

“Make room in your fridge before starting this step” - aka Claire’s version of, “Do as I say not as I do.” 😂
Like a fridge tour? We NEEEEEED a fridge tour. Especially seeing Claire's reactions of shock, concern, trepidation as she opens the fridge! I would also love a whole kitchen tour if I am being honest.
Claire, my daughter surprised my wife with your cookbook for Christmas, and together they started with the carrot cake! They had a great mother-daughter experience, and the result was magnificent! Thanks!
I love how the video is sectioned out for each step in the process so that people can rewatch specific parts if they're making the cake.
And a special step for Felix’s cameo
When the pecans went back into the oven remembering Claire saying she always burns nuts, my brain could not stop saying “Claire remember the pecans, THE PECANS CLAIRE”
I always put a timer on 'cause I'd burn the totally for sure.
It's like Carla with the buns.
Right??! :-D
Claire!!! This recipe is incredible. I’ve been craving carrot cake and as a fan of yours, I’ve had this recipe stored. Well, I finally had a reason to bake a cake and I walked away feeling so good as everyone raved about the best carrot cake they had ever had. This coming from generations older than me and people who didn’t think they liked carrot cake. Biggest compliments were about the moistness of the cake and flavor of the frosting.
how lovely to see you again. I love the way you "teach" (that's a compliment) personal, careful, informative and extremely caring about, I think, the viewer's success both here and in your book. Since watching you do the recipes here, I feel even more your presence in the kitchen when I bake from your book. Thank you.
“Not THAT complicated”. Uh oh... 😂
lolllll, every single recipe...but they're all so worth it!
Oatmeal cookies and now carrot cake? Claire is speaking to my old-people-dessert loving soul ♥️ Is bread pudding next? Jello salad? Divinity? 😂 🥰
"old-people-dessert" 😅 LMAO! I say the same thing about butterscotch anything.👴🏽👵🏽👨🏽🦳👩🏽🦳🧑🏽🦳
OMG JELL-O SALAD! More than half the people I've told about Jell-o salad in NY and NJ have no idea what I'm talking about, and give me strange looks when I explain it. Learned a couple years ago it's because I'm from/my relatives were from *The Jell-o Belt* of the upper southwest. Guess it's mostly an old folks thing elsewhere in the US?
I like that Felix's cameo is notched into the video breakdown 😂
Vinny knows who the "real star" of the show is. 😂
Claire is honestly a blessing to RUclips

and away from Dylane.
Without an intentionally induced meltdown every episode

Just used this recipe with cupcakes, I baked them for 35 minutes, used a cream cheese glaze. It’s so good , the texture was perfect ( and used a hand mixer ). Definitely worth the effort !
I’m wanting to try cupcakes with this, too! How full did you fill the cups going in??? Did they rise substantially?
I've been baking for YEARS and I learned so much just now. Thank you Claire!
Claire asking what Felix was "getting all turnt about" also made me lol
I want Claire to blow up on her own so she can upgrade her house so she can have the kitchen she always wanted like babish
IIRC she lives within a few blocks of Central Park. It came out in a BA video. Rents there are $$$. She could be in the 5 boroughs and have more space for the money.
Well at least she’s got a great start and already has 500K subs, so let’s hope for even better for her
She's rich and her family is rich, That's just her way of appealing to the average viewer.
@@EmanMorrison I think Claire is such an awesome person that she wants to do it on her own regardless of family money imo
@@MrCeltic85 thank you. It doesn't matter if she's from a wealthy family or not. She deserves to blow up and own a beautiful big kitchen she can bake and cook her favourite foods in. ❤️
Claire thank you for time stamping all of your videos! it makes it so easy to follow along at home! such a nice touch! Also I love you!
Claire is such an amazing person. So glad to see her with her own show on the internets. Missed her so much.
Every video of her just brightens my days.

She's the only content creator whose cartoon avatar actually looks like her. Nice recipe btw
This was literally delicious, and I've been eating it with wild abandon. This should be gated content... It's an insane recipe. MAKE IT.

Claire is the Greatest Of All Time. She IS the GOAT.
@@PrateekLala SHE will eat the carrot nubs
This was weirdly disappointing for me since the only thing that could make me love Claire more is if she had a goat.
@@goatlovesllama I think she said in her previous videos how she’d love to have more animals, so maybe after she gets her komondor she’ll get a goat too 👀
I think anything Claire makes would be outstanding because she simply wouldn’t have it any other way. I think she will fast approach the “Martha” status. I’m glad she can now control her own destiny. BA was her Segway to her own brand. And we were here to see it happen. Claire, you are loved by so many. All the best and enjoy sharing your passion and gift to the world. Much Aloha from Hawaii🌴🌸😎🌺
Great comment, I agree wholeheartedly. Kudos !
You are classic and yet simple to follow your recipe. Actually, I bought your book-Dessert Person, what a pleasure to make your recipes. Thank you, Claire.
Hi Claire, I asked for and received your book for Christmas and I just finished reading it. I LOVED it!. My boyfriend got me the book for Xmas... I made your Focaccia last night and WOW! Can't wait to work my way through it!
Made this cake yesterday!!!! The brown butter cream cheese is LIFE CHANGING!!! The flavors go so well!! Thank you Claire!!
I made this cake for my mom’s 70th birthday this past weekend and it was SO DELICIOUS! She had requested a carrot cake and this one seemed like a good choice. Regarding the brown butter, I actually put it in the fridge to solidify and then let it come to room temperature again before making the frosting: it worked perfectly without having to risk the frosting being too runny. Anyway, a really good recipe and it tasted amazing! My mom loved it!
Carrot cake without cream cheese frosting is like Bon Appetit without Claire: pointless
This is the comment that wins it all
Yes
She could do some more pastry chef makes gourmet...whatever. I don't see how ba could have some sort of Monopoly on that.
@@ReclinedPhysicist I feel like without the test kitchen it’s not gonna be successful. Also I think she should just move on from BA but I miss the videos sometimes

I enjoy the fact that she explains as she goes, doesn't talk "down" to us, and everything is done well, not always perfect.
Yes to the fridge tour but make it a way to cull items that aren't needed or teaching how long something can be refrigerated.
I try not to get intimidated when Claire says a recipe "isn't THAT complicated" because it's generally true and always worth the effort, like with the oat pecan brittle cookies. This recipe is a favourite in our household. Great video, Claire!

23:38 Esoteric note here: Claire baking this Carrot Cake for a one-year-old’s birthday party (who ends up not liking it) reminds me of that one episode of Gilmore Girls where Sookie bakes for a kid’s birthday party a Chocolate Cake . . .w/ a rum-raisin, tropical-fruit ganache. 😂

Happy New Year! I want to thank you for the great book and the beautiful videos to help inspire. So nice that you also list all ingredients in the description unlike many other cooks do. It's great for noting down what ingredients I need when at the store and forgot to bring my list from the book. Just pop open my phone and boom. Best of luck with your new channel and endeavors.
