      Well , you should check French chefs....they are plenty way above bruno....bruno is more a youtuber than a chef....a chef is working on a restaurant , managing the kitchen and his team....

    I need to try that cream cheese chantilly and see how much it resist heat... Gotta fill some macarons with that. I might try it with a carrot pie underneath though, for good mesure.

    5 g Flour
    50 g Eggs (1)
    60 g Carrot, peeled, washed & grated
    Cream Cheese Chantilly
    220 g Heavy cream
    5 g Vanilla
    180 g White chocolate
    220 g Cream cheese
    Cooked Carrot
    150 g Baby carrots
    300 g Carrot juice
    Carrot Jelly / Marmalade
    600 g Carrot Juice (Use saved juice from the cooked carrots)
    50 g Sugar
    4 g Agar-agar
    Garnishing
    150 g Pineapple cubes
    20 g Brown sugar
