- Japanese Strawberry Shortcake is made with a fluffy sponge cake filled with delicious vanilla whipped cream and fresh strawberries. This cake is one of my favourite because I love simple taste like vanilla, strawberries and cream! You can make this cake the day before, the more it will stay in the fridge, the more soft and fluffy the sponge will turn out!

My 1st daughter made this cake for me today :) It tasted very similar to the strawberry whipped cream cake I had in Japan. The American cake has too much butter in it, so it feels a little heavy, but I really wanted to eat the light and delicious strawberry whipped cream cake that I had eaten in Japan. So when my sweet daughter made this for me. I was so happy :) If you found this recipe for the same reason as me, I highly recommend you to try it.

Hi Fiona! I use a normal fresh dairy cream, about 35% fat. I've read that someone prefer a dairy free cream, but I have no problem with the dairy cream...which one do you prefer? Thank you so much, you made such glorious cakes that your appreciation is so important to me

This recipe helped me make the perfect genoise cake for the first time. In the previous 2 (failed) attempts, my genoise didn't rise and were dense. Those recipes were also incredibly difficult to follow since they involved the separation of egg whites from the yolks and incorporated the bain-marie technique. This recipe, on the other hand, was really straightforward and easy to follow. I didn't know what to expect but my cake layers actually rose and were soft and airy just the way that sponge cakes should. I made the cake using the recipe as shown for an event, and as far as I'm told, everyone loved it. So happy I found this recipe & video

Finally I've found the perfect sponge cake! Baked this cake today and turned out AMAZING! I used two 6" pans, the cake rose in the oven really well and it didn't shrink after baking. Also cake layers was flat I didn't need to level it. Then I made my own frosting, I frosted it with coffee Swiss meringue buttercream, soaked cake layers with little bit of milk to moisten it, filled the layers with Nutella and omg... it turned out like the bakeries' cake! I've searched for days to find the a good sponge cake recipe and I'm glad I found yours! Thank you so so much! 💖 Subscribed !

@@margrietbarsati1939 I use gas oven, so I bake on the lowest temperature around 140 C to 150 C. If you are using electric oven, i think the temperature would be 170 C like Valentina mentioned in the video. But it depends on your oven, keep checking the cakes every few minutes. I'm glad to help 🥰

Hi, thank you for printable recipe, it helps me so so so much! But I was thinking - when you put down strawberry slices and whipped cream next with piping tip, does it fills up the space beetween strawberries? You do it so flawless, with spiral movement, and after smoothing there are no gaps!

Hello Farah, welcome here! Yes, I used three 8 inch - 20 cm cake pans. If you use only one pan, you can cut the cake in three layers after baked. Hi! If I want to make only 2 layers (I'm a beginner i'm scared of 3 layered cakes), can I just divide the batter into two for two pans? Will the cake turn out thicker/higher since it's supposed to be divided into 3? Thanks!
or could I bake all of the batter using a 9 inch pan and just cut the cake into two layers? Any help is appreciated, thank you!
Hello Bomingums and welcome here! You can make only two layers equally dividing the batter in two cake pans :) the two cakes will turn out slightly higer than my three layers, but they will be ok ;) if you are a beginner, is much more easy to bake two equal cakes than divide one higher cake in two layers, so I suggest you to bake two cakes. I made this one today and it was amazing🥰and a lot easier than other recipes i have watched,i also used honeydew instead of strawberry and it was delish🥰 question though, can i used sugar water to soak the sponge cake and decreased the sugar from the icing?its just i want a moist moist sponge cake hehe
Hi Krislyn and welcome here! Glad you liked it! Yes, you can use sugar sugar syrup and decrease the sugar amount in the cake according to your taste. I suggest to not wet too much the cake with the syrup, just a bit, because this is not a classic sponge cake and the whipping cream with the fruit release moisture to the cake.
