- Genoise is a sponge cake that uses egg whites and yolks together to make bubbles.
Genoise seems to make easy, but it has many variables and must be understood in the beginning of cake making.
We're starting to make Genoise that are sure to succeed. ^^
- Ingredients
Egg 130 g
Sugar 75 g
Cake Flour 70 g
Unsalted Butter 10 g
Milk 15 g
Vanilla Extract
Cake Mold D 15cm

The good thing about your recipes is the less amount of eggs used compared to other channels where for a single cake 6-8 eggs are used.
it's cuz the cake pan is small (~6"). genoise cakes require a lot of eggs
because olivia's recipe's for a 6 inch cake while most are either 8 or 9 inches

@@leetomlee7265 yeah. My problem was folding in the flour. I use a whisk, forming a “J” motion and rotating my bowl each time. Also, work as quick as you can!

@@rukhsarkhan1536 it will rise because of the meringue. Just make sure to not overmix and work quickly once youve added flour so it wont deflate. :)

This recipe works well, have tried many others but mine always deflate idk why, this one works well, only thing i did differently i used bigger pan and baked at 140 for around 13 minutes, totally perfect

Hello! Can I ask what speed did you use when mixing with hand mixer? Also how can I notice to not overcook the egg and sugar? Thanks a lot!
Eun Hi.. I used speed 4 until its creamy and at the end used speed one to remove the air bubbles.. As I don’t have a thermometer, just double boiled it until the mixture is hot to touch.. hope this helps..

I tried this. I sliced the cake up to use as base for my coffee cheesecake. Just because I don’t like biscuit base 😄. This recipe was easy and the cake was delicious! Thank you!
How long did you beat the egss? I triend and it took me a long time, I think that is why my cake came out flat, twice
@@TheElvarstam I just beat the eggs until the texture is the same as shown in the video. Although not specified in video, I used room temperature eggs.

@@Ninaob86 ah I believe this is a type of sponge cake, which does not need baking powder / soda because of the whipped eggs + sugar that already acts as its own leavener :D

How much cocoa powder did you add? Did you adjust the flour amount?
@@nour4487 i reduced 10g of flour and replaced it with 15g of cocoa powder. Also, mix the cocoa powder in butter+milk mixture.

@@anastasyasilvana7188 maybe the temperature of the oven is too low? I've had that issue sometimes. And it could also be that you took it out of the oven before it's done. I hope that helps!

i tried this recipe and its a big success , but its take me more than 15minutes to beat the egg because it wont get teh ribbon shape so i use lil bit ovallet/sp to get it thicker, i think that because i use an old egg but overall the taste is amazing

@@chelsealorenzo1638 i use local oven, no fan with gas so i use lighter to turn it on.. and i must regurally check the thermometer to control the heat , i think it doesn't matter what oven do you use as long as u know to control the heat 😁😁

hi! i just used this recipe for my sister's birthday cake, it was one of the best cake that i have ever made! just some revisions, i added too much sugar so it was too sweet, but the overall texture was soooo good! the other revision would be regarding the oven temperature, i used 160 degree celcius for 20 mins and it was underbaked so i added around 10 mins in 180 and it was perfectly baked, so i would suggest maybe around 25-30 mins in 180. and thank you so much for sharing this recipe!

I did this today and it was an epic fail hahaha the egg didn’t fully make the 8 ribbon. Took more than 25mins in the mixer and I guess that caused it to be over-beaten ☹️
