Instant Pot Chunky Potato Soup

  • A nice hearty Chunky Potato soup in the Instant Pot. A quick recipe that makes an excellent weeknight meal. The red pepper flakes are optional and the soup still tastes terrific without them if you're not a fan of spicy. This is a great recipe for leftover ham.
    2 TBS Olive Oil
    1 medium Chopped Onion
    4 Cups Chicken Broth (Divided)
    1 tsp Salt
    1/2 tsp Pepper
    1/8 tsp Red Pepper Flakes (Optional)
    2 TBS Parsley Flakes
    8 cups Diced Potatoes
    3 oz Cream Cheese
    5 cups Diced Ham
    1 cup Frozen Corn
    2 cups Heavy Cream/Half and Half/Milk
    If you use milk, I suggest mixing 2 TBS corn starch and 2 TBS cold water in a separate container then stir into soup for added thickness.
    Toppings:
    Cheese
    Bacon (I would say this is optional, but is it really?) :)

    I went with a different format in this video than I usually do. Let me know what you think. Do you like it or do you prefer the other video format more?

      I know this video is 2 years old, lol, but I just got my Instant Pot for Christmas a few weeks ago!!!!!!!!!!
      My daughter got me a Mickey Mouse Instant Pot... she's so cute!!
      I told my husband 3 years ago I wanted 1, nave for 1, and so my baby girl started working little odd jobs just to make money to get me 1 😭
      She's so sweet ❤ 💖

      Ugh....and EVERY video was....

    I prefer the other format, love to see folk's kitchens as they cook. It's like visiting, having a cup of coffee, and watching a friend cook. Good times 😊 Love the recipe, thank you.

    i am undecided. I like seeing down into the pot but prefer the other format better. Keep filming, my cooker is on its way. Love your videos without crappy music competing, plus you don't talk ridiculously long, just needed information. You are my fav so far.

    Not a criticism, but the audio could be louder and more distinct. Granted, I am older and have tinnitus, but I'm just suggesting.
