Shoot, my Dad was, as Mom called him, a tight ass German. Water gravy was all I ever knew until I got married and moved out. I don't even remember him using anything but grease, flour, salt, pepper and water. Kinda takes me back.

This is the gravy I grew up with. When you are poor country folk this is the go to gravy. Today my children love the water gravy and thats what they make for their families. ❤🩷

I grew up on water gravy/biscuits. We had milk/butter only when the cows or goats had babies. We never knew the difference. All of us where happy healthy children. One of our favorite meals was water cornbread, fatback and greens.

I used to make water biscuits and water gravy for my mom and I. It was after a few years that I found out how much she enjoyed it. She said she liked it much more than biscuits and gravy made with milk. Well, that was good cause we rarely could afford milk.

I was blessed to have a mom that raised children (my older siblings) during the Great Depression, she could make a delicious meal out of seemingly nothing.

"Itll stick to your ribs" ah man! Just that saying there! My uncle's mom made this for him when he was young and he happened to make some when I visited them. He said that phrase. And said that's what his mom used to say to him. And it does. Makes you feel super full. He also made, what he called, biscuit toast. Had to be day old, leftover biscuit. Cut in half, toasted. And dipped in, like a milk and budded broth. With loads of pepper. Think that's like oyster soup, not sure, but with biscuits. Idk was pretty filling when we didnt have much to eat. Also great for cold weather breakfast!

During some hard times, we sometimes made gravy using cornmeal to go with cornbread. Self rising flour can be used to make gravy.

That's the only way My grandmother would make gravy. She said milk ruined gravy. Everybody would always ask for her secret & nobody knew it was just water..

This may be similar to what you remember .. let me know if you try it ( I just created it for you ! LOL ) Potato Soup
      4 potatoes
      1 onion
Carrots and any other veggies you may have on hand. Cubed to approx. 1”
      3 Tbs. butter
      4-5 Tbs. flour
3 c. milk (or 2 cups milk and one water)
      1 c. chicken broth
salt and cracked black pepper to taste
Clean and boil (or steam) potatoes and vegetables just until tender.
While cooking veggies, start your flour and liquid roux
In a skillet melt half a stick of butter. Approx. ¼ cup.
Add approx. ¼ cup flour stirring until smooth and begins to turn to a smooth paste
Stir in 2 cups milk/broth/or water whisking continually to avoid lumps.
Turn heat down a bit and allow to thicken.
Add the rest of your liquid ingredients. And bring to almost boiling again.
By now your vegetables should be tender, Drain excess water off and add vegetables to cream soup base.
Season with salt and pepper to taste
      Serve while hot
Sprinkle with parsley and thyme if you have any handy
I also tend to add a pat of butter or sour cream on the top
