Scalding rye flour before baking is one of the recipes for delicious rye bread. Also Bagels are boiled in hot water before they are baked. Much more delicious than just bread rolls.
I think it depends because I used to work in a bagel shop and we always just baked them. We’d spray the surface with water intermittently to ensure a nice golden brown on top.
To be real bagels, they have to be boiled in water with barley malt first & then baked. It’s the boiling step that gives bagels a different texture than rolls or regular bread. Obviously, people are free to mix the ingredients for a bagel & just bake it, but it would have a different texture.

This recipe looks fantastic. Many people who don't cook and know nothing because they buy pre-made food, or cook very little, would not appreciate this. I bet these have a beautiful texture and I'm going to try! Danke Schön.
My Oma would make these when I was little. She would fry them in lard not oil. She said she would make these durring the war because of food shortages. I think she used honey mixed with flour and chopped hazel nuts for the filling. It was things that they could get from the woods
They are so much better in lard lol. I made a batch for the first time myself and ate one the first time In 45 years and it was very similar to what my Oma would make. As a treat I see nothing wrong with the fat being used. Just don't sit down and eat a plate full
I'm considering fruit filling like spiced apple pie; mango raisin; or move to savory: curried mince / or meat / chicken much like empanadas stuffing. Veggie with cheese. Even cooked / poached meat, fish, chicken or meat added to ragu (thick seasoned white sauce (as used in croquettes)!
If you owned a little store where people stop for coffee in the mornings and you had these on counter for a dollar each you could make a few hundred dollars a week just selling them.
