U do not need double the dough when making calzone... a calzone is practically one pizza folded in the middle... (so one portion is fine)

I used a non-TMNT pizza cutter on my calzone. It slapped me.

This is a great recipe. A trick I learned from some of my Italian friends and family is to make a few slits on the top of the dough. This would help prevent the "doming" affect, which helps let the steam escape during cooking.

Well Calzone in italian (mostly in Tuscany) means pants, sometimes even boxers so yeah...
Pretty sure it all originates from the verb “calzare” which means “wearing” or “putting on”, it can also refer to socks, in this case I think the names comes from the fact that the filling is inside the doe, like aa sock

Fun little fact: There is no s ending here in Italy. In fact, it's not an Italian word if it doesn't end in a vowel (with some exceptions). If it ends in a a vowel, it's Italian. If it doesn't end in a vowel, the word is borrowed from another language. So, Calzone is just one, Calzoni is plural. Same with Panini. Panini is plural, a Panino is just one. Paninis is like saying Sandwicheses. Now you know some Italian :)

I like how this channel picks up such classic pieces and work on it, Dexter's omelet, Seinfeld, breaking bad and so much more.
You could prevent the “doming” by cutting a couple small slits in the top of the dough, but you’re Babish and I’m sure you knew that already.

GENIUS VIDEO. The cold proofing is something I ignored for years, but after watching other videos of "empanada' looking calzones (with egg wash/butter on top) this looks like the real deal from NY.
Also, that filling is uniquely tempting!
Remember, a Pizza has the toppings and cheese on the dough, a calzone has the toppings inside the dough, served with tomato sauce on the side, while Stromboli is the same thing as the Calzone, but cut into slices, and open.

I disagree, you can't say a stromboli is the same as a calzone. Yes, a stromboli can be a calzone, but a calzone can't be a stromboli.

I used to think that, then I started making bread regularly. I took the approach of making as much as possible in one go, sticking what I didn't need there and then in the fridge and what do you know? The dough I used last was better. Now? It's complicated. I'll take a fresh, basic bread over all of the store bought stuff but remembering whichh batch went in the fridge on which day? Not so much!

For so long I always thought this series was called Bing-ing with Babish and not Bin-ging with Babish
That’s a beautiful calzone, I’m so happy you put the ricotta in it. A lot of people will consider a Stromboli a calzone but the difference is the ricotta over the pizza sauce. And back when I was working in a pizzeria that is exactly how we would make them. It’s perfect!
Is eggplant in a calzone like that a normal ingredient?

I tried doing nothing yesterday as it was my day off and I've been working a arse off on the weekends since July. I ended up filling the holes in my yard made by my dog and picking up all the dog waste, hanging my new coat hooks, washing the dishes and laundry, fixing a leaking water valve, changing my oil, washing my car and getting it smogged and finally shopping for Christmas presents. I did a lot of nothing in between all that.
